Gather these
- 120g macadamia or cashew nuts, or seeds for a nut free option
- 60g shredded coconut, plus extra for rolling
- 10 medjool dates
- 1 tsp vanilla bean paste
- juice of 1 lime
- zest of 1 lime, can add more if desired
Instructions
Then mix like this
- Place everything into bowl. Speed 10 / 1 minute or until a dough starts to form.
- Pour mixture out on to a plate.
- Roll into 24 small balls.
- Roll in additional shredded coconut if desired.
- Place into an airtight jar or container then into the fridge to firm up.
Or cook like this
- Place everything into a food processor. High speed until a dough forms.
- Pour mixture out on to a plate.
- Roll into 24 small balls.
