Lemon Slice Bites

Description

Makes 20 bites. Can be frozen.


Ingredients

Lemon Slice Bites

  • 250g shortbread biscuits or plain biscuits of choice
  • 390g sweetened condensed milk
  • 100g desiccated coconut
  • 1.5 Tbsp lemon juice
  • zest from one lemon, can reduce if you prefer a more subtle flavour

Icing

  • 200g pure icing sugar
  • 23 Tbsp lemon juice
  • lemon zest to garnish

Instructions

Then mix like this

  1. Place all bite ingredients into bowl. Speed 9 until it comes together into a dough.
  2. Roll mixture into 20 balls. If these are too sticky to roll, allow to rest for 10 minutes to allow the biscuit to soak up the liquid. If you fine they are a little dry simply add more lemon juice.
  3. Squash ball slightly and place into the fridge to firm.
  4. Meanwhile, make the icing. Place icing sugar into a small bowl. Add a little juice at a time and whisk until a smooth, thick consistency is achieved. You want a consistency that is thick enough to sit on each of the bites.
  5. Spoon a little icing on each bite and top with a little fresh lemon zest.
  6. Store in the fridge until serving.

Or cook like this
