Peanut Butter Honey Bites

Description

NOTE: Some people have had issues melting this in certain Thermo Mixers. I highly recommend using the non thermo version to avoid any fails.


Ingredients

Scale
  • 2 cups of rice bubbles or brown puffed rice
  • 230g good quality natural crunchy peanut butter, this should be a runny consistency
  • 175g honey

Instructions

  1. Line a square cake tine with baking paper.
  2. Place peanut butter and honey into bowl. 5 minutes / 100 degrees / Speed 3 or until melted and smooth. This will vary from brand to brand depending on your oil content. Don’t be alarmed if it doesn’t melt completely. It will still mix and combine well.
  3. Add rice bubbles. Mix on reverse / Speed 2 until bubbles are covered. You may find you prefer to just put the rice bubbles in a bowl, pour over liquid and mix by hand with a wooden spoon.
  4. Place into a lined square cake tin. Smooth the top with a glass or back of a spoon.
  5. Refrigerate until set, approximately 2.5 hours.
  6. Cut into 30 bite size pieces.

Notes

But I don’t have a Thermo Mixer

  • Simply melt the peanut butter and peanut butter in a microwave safe bowl for 1 minute or until melted and smooth. Continue step
