Description
If you are looking for a dish that feeds a huge family, this is it! The meatloaf is large and filling and served with a steamer tray full of veggies really makes the meal go further.

Meatloaf
- 500g mince of choice
- 1 onion, peeled and quartered
- 2 garlic cloves, peeled
- 1 carrot, roughly chopped
- 1 zucchini, roughly chopped
- 3 tablespoons of tomato paste
- 1 tablespoon of veggie stock concentrate
- 1 tablespoon Worcestershire sauce, pus a little extra
- A few sprigs of parsley
- 3 pieces of bread, ripped up into small pieces
- Salt and pepper to taste
- 1kg potatoes, cubed
- 20g butter
- Salt and pepper, to taste
- 50g grated cheese of choice
- Veggies of choice to steam such as carrot, broccoli, pumpkin, cauliflower, corn, asparagus etc
Instructions
- Preheat oven to 180 degrees.
- Pace onion, garlic, herbs and veggies into bowl.
- Blitz on speed 7 for a few seconds. You still want some consistency and texture to the mix. If it appears too wet from the zucchini, drain some liquid.
- Add remaining ingredients.
- Blitz on speed 6 until well combined.
- Place meat into a large baking dish, shaping into a log shape. Leave room around the meatloaf. Tip: Pat the meat down well so it is nice and smooth. Ensure it is compacted nicely. This will help ensure the meatloaf slices nicely to serve.
- Splash a little extra Worcestershire sauce over the top of the meatloaf.
- Bake for 40 minutes.
- Whilst that is baking away prepare your veggies.
- Place potato cubes into the steaming basket inside the bowl. Top with 1 litre of water.
- Into your steaming attachment trays, layer veggies of choice. The steaming time varies from vegetable to vegetable. Place the hardest vegetables in. You can add other veggies in later.
- Cook at 100 degrees, speed 3 for 20 minutes or until potatoes are cooked through.
- Remove veggies and leave in your steaming attachment to keep warm.
- Place potatoes into a large bowl with butter and season well. Mash using a potato masher. Mashing these in your tmx bowl will result in a puree and wont sit on the meatloaf well.
- Once mashed, remove meatloaf from the oven and place mash on top of it with a large spoon. Be careful not to burn yourself. Sprinkle with cheese.
- Bake for 10-15 minutes or until cheese is melted.
- You can choose to steam your vegetables now instead of earlier if preferred.You can always make some pumpkin or sweet potato mash to serve alongside this too if desired.
Notes
- Those with a Thermomix will know their steaming attachment as a Varoma. Other machines will know it as the steamer.
