Savoury Mince and Red Lentils

Ingredients

Scale
  • 400g dried pasta
  • Cheese for garnish

Sauce

  • 250g beef mince
  • 70g red lentils + hot water for soaking briefly
  • 1 onion, diced
  • 2 garlic cloves, diced or crushed
  • 2 carrots, grated
  • 1 tablespoon of olive oil
  • 1/4 of a bunch of parsley
  • 400g tin of diced tomatoes
  • 3 tablespoons worstershire sauce
  • 1/4 cup of water
  • Salt and pepper

Instructions

  1. Cook pasta according to packet directions.
  2. Place lentils in a bowl and cover in hot water. Set them aside whilst you continue on with the recipe.
  3. Place oil, onion, garlic and carrots in to a frying pan and cook over a medium heat, stirring often.
  4. Add mince and drained lentils to the pan once the onion is translucent. Cook until browned.
  5. Add remaining ingredients and cook on a low to medium heat for 15 minutes or until lentils are cooked through and sauce has thickened. Stir often.
  6. If it becomes too thick just add a little water or stock to thin it.
  7. Serve on drained pasta and top with slithers or grated cheese.
