Ingredients
Scale
- 400g dried pasta
- Cheese for garnish
Sauce
- 250g beef mince
- 70g red lentils + hot water for soaking briefly
- 1 onion, diced
- 2 garlic cloves, diced or crushed
- 2 carrots, grated
- 1 tablespoon of olive oil
- 1/4 of a bunch of parsley
- 400g tin of diced tomatoes
- 3 tablespoons worstershire sauce
- 1/4 cup of water
- Salt and pepper
Instructions
- Cook pasta according to packet directions.
- Place lentils in a bowl and cover in hot water. Set them aside whilst you continue on with the recipe.
- Place oil, onion, garlic and carrots in to a frying pan and cook over a medium heat, stirring often.
- Add mince and drained lentils to the pan once the onion is translucent. Cook until browned.
- Add remaining ingredients and cook on a low to medium heat for 15 minutes or until lentils are cooked through and sauce has thickened. Stir often.
- If it becomes too thick just add a little water or stock to thin it.
- Serve on drained pasta and top with slithers or grated cheese.
