- 1 batch of 120 biscuit cookie dough (see link in description above)
- 1 tablespoon ground cinnamon
- 1/4 cup of sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat oven to 180 degrees.
- Line 4 baking trays with baking paper.
- Add the first tablespoon of cinnamon to the prepared cookie dough. Mix well.
- Mix the sugar and remaining cinnamon in a bowl. Mix to combine well.
- Roll dough into small balls. I rarely get 120 cookies from the recipe. I average about 80 or so. Im happy with that size of cookie and amount.
- Traditional Snickerdoodles dough is rolled completely in cinnamon sugar but I find this far too sugary. I roll the top of the dough ball in the sugar only. Place into baking tray and press down with fingers.
- Repeat for all balls of dough.
- Bake for 15-18 minutes or until just slightly golden brown. Don’t over bake these. You want a nice soft cinnamon cookie.
