Avoiding shredded chicken breast in the Thermomix

    I have a lot of people ask how I manage to cook chicken breast meals without shredding the chicken. Well it took me a long time and a lot of disappointing meals to work out how to do it. Cheese Filled Chicken and Sweet Potato Meatballs

My kiddies refuse to eat rocket and sweet potato. No amount of begging will work. Luckily I'm becoming good at putting veg they refuse to eat as is into meals. Popcorn Chicken

This is a tweak to my Krispy Fried Chicken I recently posted.   They are a little bit more work than the breast or strip version but worth it. These little bite size pieces are delicious! Krispy Fried Chicken Coating

The other day I posted my Krispy Fried Chicken and have already had so many people rave about it. I'm also uploading the coating part separately as it would make a good coating for veggies as well as chicken. A spicy version is also available. This is enough for three batches of ten strips. Keep remaining flour in an airtight container. It will last for up to 12 months.

Krispy Fried Chicken

    I didn't have any breadcrumbs in the freezer and no bread left to make any so I experimented tonight. This is my take on krispy fried chicken.  This was a massive hit. I only got the tiniest of pieces. Will be a regular here with salad during summer. Would make yummy burgers too.  This makes quite a bit of coating. Store remainder in an airtight container.

Garlic Pepper Chicken

I just posted my "fried rice" version of this. This is another way to serve this dish if you prefer this over a fried rice style dish. This is more of a stir fry style dish.  This recipe has been updated since orginally posting to reduce the amount of pepper in this.   Use whatever veggies you like. Bok Choy would be nice, broccolini, sugar snap peas etc.

Garlic Pepper Chicken “Fried Rice”

We are loving tmx "fried rices" at the moment. Its easy to make and makes quite a lot. I love garlic and pepper so this dish is now my fave. I can't tell you how delicious this was. With this recipe use any veg you like. I just make sure the top steamer attachment tray is full.   Don't like the look of fried rice? Don't worry! Try my Garlic Pepper Chicken variation. Chicken and Quinoa Patties

Yum yum yum! This was my first time cooking with quinoa and it was a success. I often add brown rice to beef patties so thought I would try this with chicken and quinoa. Make sure you really rinse the quinoa well. Google is scaring me with reports of not properly rinsing it and reactions. These are a more blander patty so perfect for children or BLW babies. You can add a little spice mix of choice to give them a flavour boost. We serve ours with sweet chilli sauce so didn't add anything extra than what the recipe states.

Hidden Vegetable Pasta Carbonara

This is another favorite in our house with the kiddies. This is a great easy weeknight meal as it really requires very little effort and the kiddies devour it. Its a great dish to be able to sneak it some extra vegetables as well.  We have it on its own as a main meal however it would make a great side dish for larger families.
