Cheese Filled Chicken and Sweet Potato Meatballs

My kiddies refuse to eat rocket and sweet potato. No amount of begging will work. Luckily I'm becoming good at putting veg they refuse to eat as is into meals. See my Hidden Veggies Meals and Tips for Children (and Hubbies!) section for more ideas.   These have a sweetness to them and are a nice alternative to regular meatballs. Parmesan Chicken Sausage Rolls

I can't take a decent picture of sausage rolls to save myself. I wish this photo showed how delicious these were.  I had to take it quickly before little fingers snatched them away.   The parmesan adds a different twist on my original Chicken and Vegetable Sausage Rolls.   This makes 48 sausage rolls. Trust me when I say they don't last long! You'll gobble up 48 before you know it! You can freeze these before of after cooking for a quick and easy dinner midweek.    These are good for children parties or in the lunchbox.

Cheats Veggie Sauce

Making your own pasta sauce is so easy. It really is a matter of chuck it all in and let it cook away. I love this one as I pack a lot of vegetables into it so perfect for the kiddies. I often purée this though so they can't see all the veg.    Use it with mince, over meatballs, with pasta/zoodles and a little cheese, on your chicken parmigiana, pizza sauce... The list is endless.    I make a double batch and freeze into portions. You can bottle it in jars and vacuum seal if preferred.

EDC Meatloaf with Red Sauce

This recipe is from the EDC March 2011 edition Meatloaf and Red Sauce pg 100-101 I tweaked it slightly by not placing ingredients in the middle of the meatloaf and added extra veg to the mince mix. This was a hit with my kiddies. There was nothing leftover at all much to my surprise given how big the meatloaf actually is. Veggie Packed Spaghetti Sauce

Can you see all the veggies in this sauce? No? My kiddies couldn't either!  I have a young baby so quick and easy dinners are a must for my older two. I make a big batch of this and make sure I have plenty leftover to freeze for a super quick dinner on the nights the baby is unsettled or I have run out of energy.     The sauce is very versatile:  The kiddies love this sauce over macaroni or spaghetti pasta. Hidden Veggie Meatballs

Here is another recipe that is always in our freezer for a quick dinner.  My boys love meatballs so I pack these with as much veg as I can. I usually put in vegetables  that they don’t like as is such as spinach, capsicum and leeks.  I pop these in the freezer raw and then take them straight from the freezer, pop them in a pyrex dish and pour over a tomato based sauce. I also freeze them after they have been cooked (without a sauce) and reheat quickly in the oven and serve with salad.

Hidden Vegetable Pasta Carbonara

This is another favorite in our house with the kiddies. This is a great easy weeknight meal as it really requires very little effort and the kiddies devour it. Its a great dish to be able to sneak it some extra vegetables as well.  We have it on its own as a main meal however it would make a great side dish for larger families.
