Veggie Packed Spaghetti Sauce

Description

A great way to sneak in some extra veggies! Serves 6 with pasta.


Ingredients

Scale
  • 1 onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 2 small carrots, roughly chopped
  • 2 small zucchinis, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 capsicum, seeds removed and roughly chopped
  • 10g baby spinach leaves
  • A few sprigs of basil or parsley
  • 1 tablespoon vegetable stock concentrate
  • 1 can of Tomato Supreme
  • 200g diced tomatoes
  • 500g good quality beef mince
  • 100g bacon, diced

Instructions

  1. Place all vegetables and herbs in the bowl.
  2. Blitz on speed 8 for 15-20 secs until desired consistency is achieved.
  3. Add a drizzle of oil.
  4. Cook on at 100 degrees, 5 minutes, speed 1.
  5. Add minced meat and bacon. Cook at 100 degrees, 5 minutes, reverse, soft speed.
  6. Add tomatoes, tomato supreme and stock paste.
  7. Cook at 100 degrees, 15 minutes, reverse, soft speed.
  8. Pour over cooked pasta of choice.

Notes

  • Chicken or turkey mince can be used instead of beef mince. Or try a combination of beef, pork and/or veal.
