I am often asked for a banana bread recipe made of wholemeal flour. Up until recently I didn’t have one but after some experimenting I think I finally have one that passes all teh tests – not too dry, lots of banana flavour and not overly sweet. Tick, tick, tick!

Wholemeal Banana Bread
Ingredients

- 2 large ripe bananas, peeled
- 120g butter, softened
- 90g sugar, can reduce if desired
- 2 eggs
- 1 tsp vanilla bean paste
- 280g wholemeal self raising flour
- 1 tsp baking powder
- 60g milk
Instructions
Then mix like this
- Preheat oven to 170C. Line a loaf tin with baking paper.
- Place bananas into bowl. Speed 5 / 5 seconds.
- Add remaining ingredients. Speed 5 until combined.
- Pour batter into tin.
- Place into oven and cook for 45-50 minutes or until cooked through.
- Allow cool slightly before carefully transferring to a wire rack.
Or cook like this

- Add remaining ingredients. Mix until well combined.
- Pour batter into tin.
- Place into oven and cook for 45-50 minutes or until cooked through.
- Allow cool slightly before carefully transferring to a wire rack.
