Ingredients

- 1 onion, peeled and quartered
- 1 garlic clove, peeled
- 100g carrot, grated and excess water squeezed out
- 200g zucchini, grated and excess water squeezed out
- 1 Tbsp parsley
- 6 eggs
- 100g parmesan cheese
- 30g self raising flour or GF equivalent
- 2 Tbsp oil or melted butter
- 2 Tbsp milk of choice
- salt and pepper, to taste
Instructions
Then cook like this
- Preheat oven to 180C. Line a rectangle slice tin with baking paper.
- Place onion and garlic into bowl. Speed 7 / 3 secs.
- Add remaining ingredients.
- Speed 3 until mixed. You may need to use your spatula to help.
- Pour mixture into tin.
- Bake for 30-40 minutes until set.
- Allow to cool slightly before slicing.
Or mix like this
- Preheat oven to 180C. Line a rectangle slice tin with baking paper.
- Finely dice onion and garlic. Place into a mixing bowl.
- Add remaining ingredients to bowl.
- Pour mixture into tin.
- Bake for 30-40 minutes until set.
- Allow to cool slightly before slicing.
