Caramalised Buckini Granola

A delicious granola featuring Caramelised Buckinis.


Ingredients

  • 750g oats
  • 100g caramalised buckinis
  • 200g slithered almonds
  • 100g pepitas
  • 200g sunflower kernals
  • 100g shredded coconut
  • 60g flaxseed meal
  • 15g chia seeds
  • 100g sultanas
  • 2.5 tablespoons ground cinnamon
  • 80g of coconut oil
  • 40g maple syrup
  • 1 heaped teaspoon of vanilla paste

Instructions

  1. Preheat oven to 180 degrees.
  2. In the bowl add oil, vanilla and maple syrup.
  3. Mix at 50 degrees, speed 2 until melted. This shouldn’t take too long.
  4. In two large dishes, combine cinnamon, oats, almonds, pepitas and sunflower kernals evenly across both.
  5. Pour the oil mix over the oat mixtures. Use hands or spoon to mix well.
  6. Place into the oven. I had to cook mine for 45 minutes to get a nice golden colour – you might like more or less colour. The trick is to just watch it. Stir the mixture every 10 minutes or so to avoid any burnt bits.
  7. Once almost done, add the coconut.
  8. Cook for 15 minutes or until coconut is slightly toasted.
  9. Remove from oven. Add flaxseed meal, chia and buckinis to mixture. Combine well.
  10. Once cool, store in a jar or airtight container.
  11. Serve with milk or yoghurt.
