Cheese Filled Meatballs with Steamed Vegetables – Non TMX


Ingredients

Scale
  • Vegetables of choice, or pasta/rice
  • I have used baby potatoes, carrots, zucchinis and broccoli florets.

Meatballs

  • 300g mince
  • 1/2 tablespoon dried onion flakes
  • 1 teaspoon dried garlic powder
  • Salt and pepper, to taste
  • 20 small cubes of mozzarella cheese, or cheese of choice

Sauce

  • 1/2 tablespoon dried onion flakes
  • 1 teaspoon dried garlic powder
  • 1 zucchini, grated
  • 1 carrot, grated
  • 400g tin diced tomatoes
  • 1 teaspoon paprika
  • 1/2 tablespoon chopped rosemary
  • 1/2 tablespoon chopped parsley
  • 1 beef stock cube
  • Salt and pepper, to taste

Instructions

Meatballs

  1. Preheat oven to 180 degrees.
  2. Place all ingredients except cheese into a bowl.
  3. Using your hands, mix until well combined.
  4. Wrap a little of the mince mixture around a cube of cheese.
  5. Place meatballs into an oven proof dish.

Sauce

  1. Combine all sauce ingredients in a bowl and mix to combine.

Assembly

  1. Pour sauce over meatballs.
  2. Bake for 30 minutes or until cooked through.

Vegetables

  1. Whilst the meatballs are cooking in the oven, steam your potatoes in your desired method.
  2. Halfway through add your broccoli, carrots and zucchini.
  3. Serve.
