Chicken Broccoli Nuggets

Description

These are great to make in bulk and freeze either before or after the cooking process. It makes for a super quick meal. I even put these in the lunchbox much to the kiddies delight.


Ingredients

Scale
  • 3 slices of day old bread
  • 500g chicken breast, chopped into chunks
  • 110g broccoli florets
  • 1 small carrot, chopped roughly
  • 1 onion, peeled and quartered
  • 2 small garlic cloves, peeled
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 180 degrees. Line a baking tray with baking paper.
  2. Place bread in to bowl. Blitz on speed 7 until desired consistency, as fine or coarse as you like. Set aside.
  3. Add onion, garlic and vegetables to bowl.
  4. Blitz on speed 7 for 5 seconds. Scrape down.
  5. Add remaining ingredients.
  6. Blitz on speed 7 until combined. Approximately 5-10 seconds.
  7. Shape into 18 small nugget shapes.
  8. Coat with breadcrumbs.
  9. Place onto tray. Drizzle with a little olive oil.
  10. Bake for 30 minutes. Flip halfway through cooking.
  11. Serve.

Notes

  • You can use chicken thigh instead if preferred. Breast can dry out so be sure not to over cook it.
