Description
These are great to make in bulk and freeze either before or after the cooking process. It makes for a super quick meal. I even put these in the lunchbox much to the kiddies delight.

- 3 slices of day old bread
- 500g chicken breast, chopped into chunks
- 110g broccoli florets
- 1 small carrot, chopped roughly
- 1 onion, peeled and quartered
- 2 small garlic cloves, peeled
- Salt and pepper, to taste
Instructions
- Preheat oven to 180 degrees. Line a baking tray with baking paper.
- lace bread in to a food processor. Blitz on high speed until desired consistency, as fine or coarse as you like. Set aside.
- Add onion, garlic and vegetables to processor.
- Blitz on high speed for 5 seconds or until vegetables are fine. Scrape down.
- Add remaining ingredients.
- Blitz on high speed until combined.
- Shape into 18 small nugget shapes.
- Coat with breadcrumbs.
- Place onto tray. Drizzle with a little olive oil.
- Bake for 20-30 minutes. Flip halfway through cooking.
- Serve.
Notes
- You can use chicken thigh instead if preferred. Breast can dry out so be sure not to over cook it.
- If you prefer, you can use chicken mince and grate or finely chop your veggies in this and mix in a bowl then proceed to shape and cook.
