Chicken Broccoli Nuggets

Description

These are great to make in bulk and freeze either before or after the cooking process. It makes for a super quick meal. I even put these in the lunchbox much to the kiddies delight.


Ingredients

Scale
  • 3 slices of day old bread
  • 500g chicken breast, chopped into chunks
  • 110g broccoli florets
  • 1 small carrot, chopped roughly
  • 1 onion, peeled and quartered
  • 2 small garlic cloves, peeled
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 180 degrees. Line a baking tray with baking paper.
  2. lace bread in to a food processor. Blitz on high speed until desired consistency, as fine or coarse as you like. Set aside.
  3. Add onion, garlic and vegetables to processor.
  4. Blitz on high speed for 5 seconds or until vegetables are fine. Scrape down.
  5. Add remaining ingredients.
  6. Blitz on high speed until combined.
  7. Shape into 18 small nugget shapes.
  8. Coat with breadcrumbs.
  9. Place onto tray. Drizzle with a little olive oil.
  10. Bake for 20-30 minutes. Flip halfway through cooking.
  11. Serve.

Notes

  • You can use chicken thigh instead if preferred. Breast can dry out so be sure not to over cook it.
  • If you prefer, you can use chicken mince and grate or finely chop your veggies in this and mix in a bowl then proceed to shape and cook.
