Festive Rudolf Donuts

Ingredients

Scale
  • 130g butter or nuttelex, cubed
  • 250g self raising flour, can use GF flour designed for cakes and baking
  • 70g sugar, or less if preferred
  • 160g milk, can use DF varieties
  • 1 egg
  • 2 tsp vanilla bean paste

Decorations

  • 200g milk or dark chocolate, melted
  • 20 red coated chocolates (e.g.: smarties or m&ms)
  • 40 candy/edible eyes
  • 40 pretzels

Instructions

TMX method

  1. Place butter into bowl. Melt 4 minutes / 50C / Speed 2.
  2. Add remaining donut ingredients to bowl. Mix on Speed 4 for 30 seconds until combined.
  3. Scrape down and mix again briefly if needed to incorporate.
  4. Place mixture into a piping bag. Pipe mixture into a donut machine or tin. This is much easier than spooning it into the moulds.
  5. The machine takes 5-8 minutes to cook but an oven would be around 15-18 minutes at 180C. This will depend on the size of your tin of course.
  6. Remove donuts and allow to cool on a cooling rack.
  7. Once cool, dip one side of the donut into the melted chocolate. Place chocolate side up on a cooling rack and allow to sit until chocolate is slightly cooler and firmer but not set completely.
  8. Place two pretzels at the top of the donut for antlers. At the bottom of the donut place two eyes and a red coated chocolate for a nose.
  9. Allow to set.
  10. Enjoy!

  2. Add remaining donut ingredients to bowl. Mix until just combined.
  3. Place mixture into a piping bag. Pipe mixture into a donut machine or tin. This is much easier than spooning it into the moulds.
  4. The machine takes 5-8 minutes to cook but an oven would be around 15 -18 minutes at 180C. This will depend on the size of your tin of course.

Notes

  • You can use a cupcake or muffin in place of the donut if you do not have a donut machine or tin. Store-bought donuts work just as well also.
