Frozen Cookie Dough Balls – TMX version

Ingredients

Scale

Flavours of choice such as

  • 150g choc chips or
  • 2 tablespoons of sprinkles or
  • 75g slithered almonds and 75g choc chips or
  • 75g sultanas or
  • 50g chopped macadamias and 100g white choc chips or
  • 75g dried apple diced and 1 tablespoon ground cinnamon or
  • 40g cocoa powder and 100g choc chips of choice

Base dough recipe

  • 200g butter, cubed
  • 160g brown sugar
  • 40g sugar
  • 2 teaspoons vanilla bean paste or similar
  • 2 eggs
  • 1 teaspoon baking powder
  • 300g plain flour

Instructions

Preparation

  1. Line a baking tray with baking paper.
  2. Place butter, sugars and vanilla into bowl.
  3. Blitz on speed 5 for 1 minute. Scrape down every 20 seconds to ensure even creaming.
  4. Add eggs.
  5. Blitz on speed 5 for 20 seconds.
  6. Add remaining ingredients.
  7. Blitz on speed 5 until just combined.
  8. Roll a tablespoon dough into a ball and place onto tray.
  9. Repeat for all dough.
  10. Place into the freezer for and hour and a half to two hours.
  11. Once frozen, place balls into a freezer safe bag or container until needed.
  12. You can freeze these for up to three month in a freezer safe vessel.

Cooking

  1. You can thaw these and flatten if you want a flatter biscuit or you can can simply pop on a tray frozen and bake. You will have a yummy biscuit ball. I make these into small, bite size biscuits.
  2. Preheat oven to 180 degrees.
  3. Line a baking tray with baking paper.
  4. Place biscuit dough on to tray. If thawed cook for 8-10 minutes. If frozen cook for about 12-15 minutes. Keep an eye on them as they will cook quickly.
