Frozen Pizzas

Description

This recipe will make 2 thick crust pizzas, 3 medium pizzas or 4 thin crust pizzas.


Ingredients

Scale

Pizza bases

  • 450g lukewarm water
  • 750g bakers flour
  • 3 teaspoons yeast
  • 1.5 teaspoon salt
  • 2 tablespoons olive oil

Base sauce

  • See blog for homemade tomato paste or passata which both work well

Toppings

  • Use any toppings that you like
  • 200g grated cheese, I grate mine in the tmx

Instructions

Bases

  1. Add the ingredients in this order: yeast, water, oil, flour, salt.
  2. Blitz on speed 7 for 10 seconds to roughly combine.
  3. Knead for 6 mins.
  4. Remove dough and place into a lightly oiled bowl. Cover with cling film and place into a warm spot. I use the front seat of my car or a warmed oven.
  5. Leave this to rise for approximately an hour or until doubled.

Assembly

  1. Preheat oven to 180 degrees.
  2. Line two large square freezer safe containers with baking paper.
  3. Remove dough from bowl and divide it into desired portions.
  4. Knock out the air by shaping your dough into desired number of pizza bases. I shape these within the container to ensure I have the right size.
  5. Place paper and base onto a baking tray and bake for 6 minutes. You are just wanting to par-bake it. This will ensure it doesn’t have a soggy base after cooking. If you are using a very hot pizza stone to cook your pizzas you can skip this step.
  6. Allow to cool completely.
  7. Place into the container.
  8. Top with sauce.
  9. Cover with toppings and grated cheese.
  10. Place lid on securely and pop into the freezer.
  11. Freeze for 3-6 months.

To cook

  1. Preheat oven to 180 degrees.
  2. Remove frozen pizza from the container and place onto baking trays. You can use a very hot pizza stone if you prefer a crispy crunchy base.
  3. Bake for approximately 20-30 minutes or until cooked to your liking.
  4. Serve.

Notes

  • If you don’t have a tmx, you can make pizza dough by kneading the ingredients by hand. Knead until a nice smooth dough has formed.
