Hidden Veggie Quiche

Description

A great way to hide some extra veggies. Always a hit at our house for a last minute lunch or dinner.


Ingredients

Scale
  • 5 slices of shortcut bacon, diced
  • 2 small zucchinis, roughly chopped
  • 20g spinach, see below note
  • 1/2 yellow capsicum, chopped roughly
  • 1 onion, peeled and quartered
  • 1 clove of garlic, peeled
  • 4 large or 5 small eggs
  • 1/2 cup of milk
  • 1/4 cup of plain flour
  • 50g grated cheese (can be more or less)
  • Olive oil, drizzle

Instructions

  1. Preheat oven to 180 degrees. I use a silicone flan form to cook the quiche in.
  2. Place onion, garlic and vegetables in bowl. Blitz on speed 8 for 5-6 secs or until desired consistency.
  3. Add bacon and a drizzle of olive oil to bowl.
  4. Cook at 100 degrees, 7 minutes, speed one (This step is completely optional. I often skip this to save time and the flavour is still great).
  5. Add remaining ingredients. Mix on speed 3 until combined.
  6. Pour mixture into prepared dish or form.
  7. Bake for 30-40 minutes or until set and a golden brown crust is formed on top.
  8. Serve with salad and crusty bread.

Notes

  • Blitzing spinach in a high power processor releases a lot of liquid and colour. To avoid green quiche I recommend just chopping the spinach by hand into “shreds”.
  • Ham can be used instead of bacon for a more cost effective option.
  • Leek and/or spring onion can be used in place of onion.
  • Corn kernels are a great addition to this. I purée these if I want them hidden or use as is.
