Sausage and Bean Casserole with Mash – TMX

Ingredients

  • 8 sausages
  • 500g potatoes, peeled and cubed
  • 1 onion, peeled
  • 2 garlic cloves, peeled
  • 1 carrot, roughly chopped
  • 2 stalks of celery, roughly chopped
  • Oil
  • 400g cannellini beans rinsed and drained
  • 400g tinned dice tomatoes
  • 1 tablespoon worstershire sauce
  • 100mls beef stock
  • A few sprigs of parsley
  • Salt and pepper to taste

Instructions

  1. Place potatoes into steaming basket and put into place.
  2. Pour over 900mls water. Add sausages to the steaming attachment tray in a criss-cross pattern to allow air through.
  3. Cook at steaming temperature, speed 4 for 22 minutes.
  4. Remove steaming attachment and steaming basket from bowl. Set aside.
  5. Add onion and garlic to bowl.
  6. Blitz on speed 7 for 5 seconds.
  7. Add a drizzle of oil.
  8. Cook at steaming temperature, speed 2 for 2 minutes.
  9. Add celery and carrot.
  10. Blitz on speed 7 for 5 seconds. Scrape down. Repeat.
  11. Add tomatoes, sauce, stock, parsley and seasoning.
  12. Cook at 100 degrees, speed 2 for 7 minutes.
  13. Meanwhile peel and slice your cooked sausages into 1-2 cm pieces.
  14. Add butterfly and add sliced sausages and beans.
  15. Cook at 100 degrees, reverse, speed 1 for 5 minutes.
  16. Mash your potatoes using a potato masher or preferred method.
  17. Serve sausage casserole alongside potato.
