Savoury Mince and Red Lentils – TMX version

Description

An easy weeknight dinner for the whole family. Super budget friendly with only 250g of mince used and lentils to bulk it out.


Ingredients

Scale
  • 400g dried pasta
  • Cheese for garnish

Sauce

  • 250g beef mince
  • 70g red lentils + hot water for soaking briefly
  • 1 onion, peeled and quartered
  • 2 garlic cloves, peeled
  • 2 carrots, roughly chopped
  • 1 tablespoon of olive oil
  • 1/4 of a bunch of parsley
  • 400g tin of diced tomatoes
  • 3 tablespoons worstershire sauce
  • Salt and pepper

Instructions

  1. Cook pasta according to packet directions.
  2. Place lentils in a bowl and cover in hot water. Set them aside whilst you continue on with the recipe.
  3. Place onion, garlic and carrots in to the machine bowl.
  4. Blitz on speed 7 for 4 seconds. Scrape down.
  5. Add oil and cook at 100 degrees, speed 2 for 2 minutes.
  6. Add mince in two large pieces (to help keep some consistency to it whilst cooking) and drained lentils.
  7. Cook at 100 degrees, reverse, spoon soft for 2 minutes. See note below*
  8. Add remaining ingredients and cook at 100 degrees, reverse, spoon soft for 15 minutes or until red lentils are tender.
  9. Serve on drained pasta and top with slithers or grated cheese.

Notes

  • *If you want a chunkier mince, place mince into the steaming basket and continue on with the remainder of steps. The mince can cook inside the basket whilst the sauce bubbles on around it. Before serving, add the mince to the tmx bowl and blitz on speed 2 for 3-5 seconds just to mix and break up any really large pieces.
