Strawberry Apple Granola

Serve with milk or yoghurt and fresh fruit.


Ingredients

  • 750g oats
  • 200g sliced almonds, or slithered
  • 100g pepitas
  • 200g sunflower kernals
  • 200g shredded coconut
  • 60g flaxseed meal
  • 15g chia seeds
  • 100g dried apple chunks or rings, diced
  • 100g dried strawberries, diced
  • 100g sultanas
  • 2.5 tablespoons ground cinnamon
  • 80g of coconut oil
  • 30g honey
  • 1 heaped teaspoon of vanilla paste

Instructions

  1. Preheat oven to 180 degrees.
  2. In a microwave safe bowl add oil, vanilla and honey.
  3. Melt in the microwave for 1 minute. Stir to combine. Alternatively melt in a saucepan over medium heat.
  4. In a large dish combine cinnamon, oats, almonds, pepitas and sunflower kernals.
  5. Pour the oil mix over the oat mixture. Use hands or spoon to mix well.
  6. Spread mixture across two large ovenproof dishes or trays lined with baking paper.
  7. Place into the oven. I had to cook mine for 45 minutes to get a nice golden colour – you might like more or less colour. The trick is to just watch it. Stir the mixture every 10 minutes or so to avoid any burnt bits.
  8. Once almost done, add the coconut.
  9. Cook for 15 minutes or until coconut is slightly toasted.
  10. Remove from oven. Add flaxseed meal, chia and fruits to mixture. Combine well.
  11. Once cool, store in a jar or airtight container.
