- 4 weetbix, crushed into crumbs
- 75g brown sugar
- 170g white self raising flour
- 40g shredded coconut
- 145g softened butter, cubed
- 1 teaspoon of vanilla bean paste
Instructions
- Preheat oven to 180 degrees.
- Line two baking trays with baking paper.
- Place all of base ingredients into bowl.
- Mix with a spoon until well combined and a dough forms. You can use a food processor if you wish.
- Roll into 28 small balls and place on to the tray. Ensure you leave space between as they will grow substantially in the oven.
- Press down lightly with a fork.
- Bake for 15-18 minutes until slightly golden.
