Apples
- 2 large apples, peeled and cubed into 1cm x 1cm sizes
- 1 teaspoon of cinnamon
Cake Batter
- 130g butter, cubed & softened
- 100g sugar
- 350g self raising flour
- 1 teaspoon of ground cinnamon
- 1 teaspoon of mixed spice
- 1 teaspoon of ground nutmeg
- 2 eggs
- 250g milk
Coating
- 2 tablespoons sugar
- 1/2 tablespoon of ground cinnamon
- 10g melted butter
Instructions
- Preheat oven to 170 degrees. Grease or line a 20cm springform tin with baking paper.
- Coat cubed apple in cinnamon. Set aside.
- Place 130g of butter into a bowl.
- Using electric beaters, cream the butter. Scrape down bowl.
- Add sugar and spices.
- Beat the sugar and spices into the butter.
- Add remaining ingredients.
- Mix until just combined. Scrape down bowl and mix for a few seconds more.
- Pour into prepared tin.
- Place apples on top and press into batter slightly.
- Bake for 1 hour or until cooked through.
- Meanwhile, combine the additional sugar and cinnamon.
- Once cake has cooled, brush melted butter over the top and sprinkle over the cinnamon sugar whilst hot.
- Allow to cool and serve with a dollop of fresh cream.
