Apple Spice Cake

Ingredients

Apples

  • 2 large apples, peeled and cubed into 1cm x 1cm sizes
  • 1 teaspoon of cinnamon

Cake Batter

  • 130g butter, cubed & softened
  • 100g sugar
  • 350g self raising flour
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of mixed spice
  • 1 teaspoon of ground nutmeg
  • 2 eggs
  • 250g milk

Coating

  • 2 tablespoons sugar
  • 1/2 tablespoon of ground cinnamon
  • 10g melted butter

Instructions

  1. Preheat oven to 170 degrees. Grease or line a 20cm springform tin with baking paper.
  2. Coat cubed apple in cinnamon. Set aside.
  3. Place 130g of butter into a bowl.
  4. Using electric beaters, cream the butter. Scrape down bowl.
  5. Add sugar and spices.
  6. Beat the sugar and spices into the butter.
  7. Add remaining ingredients.
  8. Mix until just combined. Scrape down bowl and mix for a few seconds more.
  9. Pour into prepared tin.
  10. Place apples on top and press into batter slightly.
  11. Bake for 1 hour or until cooked through.
  12. Meanwhile, combine the additional sugar and cinnamon.
  13. Once cake has cooled, brush melted butter over the top and sprinkle over the cinnamon sugar whilst hot.
  14. Allow to cool and serve with a dollop of fresh cream.
