Cinnamon Loaf

Description

This is a great way to use up all that buttermilk you have from butter making.


Ingredients

Scale
  • 70g butter
  • 400g self raising flour
  • 200g sugar
  • 10g ground cinnamon
  • 2 eggs
  • 210g buttermilk or milk of choice

Instructions

  1. Preheat oven to 180 degrees.
  2. Line a loaf tin with baking paper.
  3. Place all dry ingredients and butter into bowl.
  4. Blitz on speed 8 until fine crumbs form. About 15-20 seconds.
  5. Add milk and eggs.
  6. Blitz on speed 4 for 30 seconds until well combined.
  7. Pour into prepared tin.
  8. Cook for 35-40 minutes until firm to touch.
  9. Cool on wire rack.
  10. Serve into slices as is or with a little butter or jam.
  11. Serve warm or cold.
