Description
A great alternative to store bought tinned spaghetti.
Ingredients
Scale
- 200g spaghetti pasta
- 10g olive oil
- 300g tin of Tomato Supreme*
- 150g roasted capsicum, drained and rinsed if using the jar variety
- 1 onion, peeled and roughly chopped
- 3 peeled garlic cloves, or less if preferred
- 2 carrots, roughly chopped
- 1 small zucchini, roughly chopped
- Salt and pepper
- Shaved parmesan cheese to top
Instructions
- Cook spaghetti pasta according to packet instructions. I cook it on the stove whilst making the sauce in the tmx. You can make the sauce first, pop into an insulated server than cook spaghetti into your machine.
- Place carrot, zucchini, onion and garlic into bowl.
- Blitz on speed 9 until fine.
- Scrape down.
- Add oil and cook at 100 degrees, speed 2 for 5 minutes.
- Add remaining ingredients.
- Cook at 100 degrees, speed 2 for 10 minutes.
- Blitz on speed 10 until smooth and puréed. You can add some water or stock at this point to thin.
- Combine with pasta and top with shaved parmesan cheese.
Notes
- Tomato Supreme is a tinned tomato and capsicum mix. It can be found with tomato paste in the supermarket. It smells and tastes great and I prefer it to tinned tomatoes. If you prefer not to use it I would use 300g fresh deseeded tomatoes and a red capsicum. Flavours will be different however.
