Honey Mustard Chicken Bites

Description

A twist on honey mustard chicken.


Ingredients

Scale
  • 500g chicken breast, chopped into chunks
  • 1 garlic clove, peeled
  • 1 onion, peeled
  • 1 carrot,roughly chopped
  • 1 small zucchini, roughly chopped
  • 1.5 tablespoon honey
  • 1.5 tablespoon wholegrain mustard
  • 4 sprigs of parsley
  • Salt and pepper, to taste

Instructions

  1. Place veggies and parsley into a food processor.
  2. Process on medium speed until fine. Scrape down.
  3. Add remaining ingredients.
  4. Process on medium speed until well combined.
  5. Shape into 14 small patties.
  6. Cook either in an oven at 180 degrees for 20 minutes or in a frying pan over medium heat until cooked through.

Notes

  • Due to the honey, it may splatter slightly in a pan so keep that in mind. Turn the heat down slightly if that does happen.
  • If you don’t have a food processor, use chicken mince and grate your veggies before mixing.
