- 500g minced beef
- 100g fresh breadcrumbs
- 2 onions, peeled and quartered
- 2 teaspoons curry powder
- Salt and pepper, to taste
- 6 sprigs of parsley
- 1 egg
- 125g milk
- 125g cup water
Sauce
- 250g water
- 290g tomato sauce
- 85g worcestershire sauce
- 100g brown sugar
- 1 teaspoon instant coffee
- 60g lemon juice
- 85g brown vinegar
Instructions
- Place onions and parsley into bowl.
- Blitz on speed 8 for 5 secs. Scrape down.
- Repeat.
- Add curry powder and egg.
- Blitz on speed 6 for 5 secs.
- Add breadcrumbs, meats, salt and pepper.
- Blitz on speed 6 for 30 secs using the spatula to combine everything. Blitz for longer if needed.
- Combine milk and water and slowly drizzle in through the hole whilst on speed 6. Continue mixing until mixture is smooth and glossy.
- I placed my meat mix into a loaf tin and onto a baking dish however Vera shapes the meat into loaf shape and places in greased baking dish.
- Bake at 180 degrees for 30 minutes.
- Meanwhile, wash the bowl and and place all of the sauce ingredients in to it. Cook on steaming temperature, speed 3 for 5 minutes. Reduce temp to 80 degrees and cook for another 5 minutes, speed 3. This will be a runny sauce.
- Remove meatloaf from oven after the initial 30 minutes and carefully drain off excess fat.
- Pour 1/4 of the sauce over loaf, return to oven and bake further 45-60minutes or until cooked through. I basted the meatloaf with the sauce every 10 minutes or so.
- Serve with veggies or salad.
