This post is applicable to Thermomix TM 31 users.
As some of you may know late last week there was quite a stir in the Thermomix world regarding the use of Varoma temperature on speeds no higher than 2 for a Thermomix TM31.
There was much confusion surrounding this as it was new information to many of us. Despite many Thermomix Cookbooks having higher than speed 2 written in their methods, it has been instructed that TM31 users do not go over speed 2 when using Varoma temperature. This is as per the TM 31 user manual below.
Yesterday Thermomix posted a response on their Facebook Page regarding the confusion. To date there has been no official announcement, post or otherwise to the best of my knowledge.
When asked about how this affects recipes in the EDC (Everyday Cookbook) that have speeds higher than 2 when using the Varoma temperature, the response was:
What does this mean for TRTLMT recipes?
I have been pondering on this very question all night hence the delay in making this post. I have always been under the impression and instructed many times that cooking on Varoma temperatures up to speed 4 was fine and in fact ideal for steaming hence why you will see that reflected in my blog and recipes.
I will be reviewing and re testing my recipes where applicable to match this safety advice for TM31 machines. Unfortunately dropping the speed also increases cooking time so I will need to go through these one by one. Please bare with me whilst I undertake this process. But I use Paprika app and other recipe storing apps?
Recipe storing apps can be great for easy access to recipes. The only problem is most, if not all, will not update you when a recipe has been changed or tweaked slightly on website or blog. Whilst I don’t update my recipes often, occasionally I do and it means you do not have the most up to date version.
