10 Second Coconut Rough Loaf

My 10 Second Coconut Bread has been a MASSIVE hit. It is quick, easy and very adaptable. I know many people have been able to tweak it using spelt flour, rice/soy/nut milks and changing the sugar used in it. This is a really versatile loaf/cake that can suit lots of allergies - it has no eggs or nuts either! I'm a genius. Truth be told its a recipe I winged and worked out a success. I wish every recipe was like that! Another tweak is to turn it into a chocolate coconut loaf, or what we like to call it here, the 10 second Coconut Rough Loaf. My boys love [...]

Created with Jamie | Crunchy Garlic Chicken Fillets with Pesto Potatoes

Product was provided by Woolworths for this recipe creation* Those that are familiar with my blog know I use packet ingredients in some of my recipes. I still love and buy take away food. I still buy pre-prepared foods. As much as I love creating things from scratch where I can, not everything we eat is and that's okay. We sometimes get caught up in thinking we have to make everything from scratch in our magic $2000+ machine but that isn't the case at all. You use it how you see fit for your family and household. Whatever works I say! I am a mum of three young and [...]

Cheesy Herb Crackers

Why not wow your friends with homemade crackers for your next get together instead of store bought? Oh my goodness these are absolutely delicious and if you love a cheesy cracker this is right up your alley! These remind me a lot of cheddar "Shapes". The flavour will depend on the cheese you use though of course. I make these regularly now since creating this recipe recently. I make a batch of dough but freeze half for later in the week. Simply thaw for forty five minutes to an hour and then roll, cut and bake. Very simple and a great snack for the lunchboxes or afternoon tea. [...]

Chocolate Chickpea Biscuits

I am not sure where I found this recipe for Chocolate Chickpea Biscuits from. I had it jotted down and loved making these... until the baby sucked the recipe to death. I kid you not. So here are my biscuits by memory. I am hoping I have remembered all the ingredients. Thanks to sleep deprivation from said baby I may have left something out but they taste sooooo good so I'm happy regardless. They are a delicious soft biscuit. Almost muffin like. Quite similar in texture to my Pumpkin Choc Chip Biscuits actually. So if you like them you will like these. Hate chickpeas? Don't worry. So does my [...]

20 Minute Beef Stroganoff

One thing that we will still buy in packet form is Beef Stroganoff. My partner loves it. I have been trying to find a Stroganoff recipe he would like to replace it so I could stop purchasing it but had no luck. I had given up. I can thank my dearest friend Candice for this recipe. I remembered having this years ago and loving it so decided to experiment a bit and do it tmx style. Mine does vary ever so slightly just to add onion, garlic and paprika as we love those flavours here. This recipe is mushroom-less as no one in this house is mushroom fans. You [...]
