These are delicious! These berrylicious bliss balls come from my Ready. Steady. Lunch! Mini Cookbook (This book is jam packed full of lunchbox friendly goodies!).

These have been so popular that I thought I would share them on the blog for everyone. They are lunchbox friendly, take no time at all and a hit with the kiddies. Better yet, they can be frozen so you can make a large batch over the weekend and freeze for weeks to come.

Berrylicious Bliss Balls

Description

Makes approximately 90 mini balls.
These can be frozen once rolled. Freeze in an airtight freezer container and thaw before consuming.


Ingredients

Scale
  • Desiccated coconut to coat mini balls

Strawberry

  • 100g dried strawberries
  • 80g toasted muesli, can use a GF variety

Blueberry

  • 100g dried blueberries
  • 80g toasted muesli

Cranberry

  • 100g dried cranberries
  • 80g toasted muesli

Instructions

Then mix like this

  1. *Repeat this process for all batches of balls*.
  2. Place all ingredients except the coconut into bowl. Speed 10 / 1 minute or until a dough forms. You should be able to squeeze a small amount of the mixture together and it will hold its shape.
  3. Spoon mixture out onto a plate and roll 30 mini balls from this. Roll in the coconut to coat.
  4. Store in an air tight jar in the fridge for seven days.
  5. Or cook like this!
  6. *Repeat this process for all batches of balls*.
  7. Place all ingredients except the coconut into a food processor. Process on high or until a dough forms. You should be able to squeeze a small amount of the mixture together and it will hold its shape.
  8. Spoon mixture out onto a plate and roll 30 mini balls from this. Roll in the coconut to coat.
  9. Store in an air tight jar in the fridge for seven days.
