Tomato and Roast Capsicum Sauce

    Just an easy recipe tonight as I use this sauce in an upcoming recipe that will be posted here. This is a great sauce to make up and freeze into 2-3 batches for future use in main meals or smaller batches. It is great stirred through cooked pasta with a little shaved or grated cheese. It makes a great bolognese sauce with beef or chicken mince and it tastes delicious on pizzas as a base sauce. Spoon over cooked chicken breasts or use as a dip for nuggets and the like. So versatile!

Passata

  I just realised that I have never posted my Passata recipe on the blog. I have quite a few recipes to post that uses it so I thought it is about time to upload it. Amatriciana Sauce

  Who wants dinner on the table in under 20 minutes and costs less than $10 to serve 4-6? This is the recipe for you. This is one of my favourite pasta sauces served through large pasta shapes (so teh baby can devour them - he loves this!) or through zucchini noodles.  It is so versatile and makes a great pizza base sauce too. Roasted Capsicum and Tomato Paste

  I cant believe I haven't posted this Roasted Capsicum and Tomato Paste recipe yet as it is one of my most used recipes alongside my bread recipe. This should be a staple in all fridges or freezers alongside your vegetable stock concentrate. I love making tomato paste. Cheats Veggie Sauce

Making your own pasta sauce is so easy. It really is a matter of chuck it all in and let it cook away. I love this one as I pack a lot of vegetables into it so perfect for the kiddies. I often purée this though so they can't see all the veg.    Use it with mince, over meatballs, with pasta/zoodles and a little cheese, on your chicken parmigiana, pizza sauce... The list is endless.    I make a double batch and freeze into portions. You can bottle it in jars and vacuum seal if preferred.

Lemon Chermoula Marinade

I saw this on the recipe community and have been eager to try this. We are heading to a BBQ tonight so I thought I would make it to marinate the chicken breasts in. It smells delicious. My partner keeps walking around the house saying “Gosh that smells good”. The verdict: I used much much less cumin then asked for in the recipe. Garlic, Chilli and Lime Dressing

Did you see the delicious salad we had last night for dinner? It was amazing. The flavours were delicious. I tweaked the dressing to suit our tastes. This is a must try!!!  All you need to do is blitz 2-4 peeled garlic cloves, 1 deseeded chilli and the peel of half a lime on speed 7 until fine. Scrape down. Add 20g fish sauce, 50g brown sugar, juice from the lime (if some of the pulp goes in great!!! It adds little flavour bursts!) 50g olive oil or oil of choice. Bacon and Tomato Pasta Sauce

This is such a versatile sauce full of flavour and lots of hidden vegetables. It's great as a pasta sauce. Serve it over pasta for an easy meal. It also makes a great pizza base sauce or for sauce to go on your scrolls with some cheese, spinach and capsicum.  I make up a batch when I have veggies to use up and then I freeze it. It's a very quick meal for those hectic nights.
