Baked Muesli Bars

Join us This is my recipe for Baked Muesli Bars. They are a spin on my Fruitless Muesli Bars that are very popular! My kiddies absolutely love these and they are made almost weekly in my house. They freeze well too so are great to whip up and freeze for those days you have nothing left in the house for the lunchboxes! Today is the second day of our fourth round of the #freezertolunchbox 5 day challenge. This edition is all about recreating store bought favourites and oh boy do we have delicious recipes coming up this week. If you missed the challenge and want to know when another is [...]

Apple Cinnamon Pikelets

Join us We loooooooooove pikelets in our houses so when I realised the freezer was empty and there were no more lunchbox snacks left I thought I would get cooking. Our fruit bowl was overflowing with apples so I thought why not whip up a batch of apple cinnamon pikelets. Anything with apple and/or cinnamon is always a winner in our house. These make for a great breakfast as well served with a little honey but they make for an even better dessert topped with a big scoop of vanilla bean ice cream! Don’t forget to hang out with TRTLMT in all the cool places!     [...]

Apple and Banana Oat Pods

Join us These Apple and Banana Oat Pods are so easy, tasty and use a handful of everyday ingredients. These are a cross between a super soft cookie and a little morsel of porridge. These are great to make and pop into the freezer for a quick lunchbox or morning tea snack. They even make a good breakfast snack on the run! We have been busy with our current round of our Freezer to Lunchbox 5 day cooking challenge! This round is all about swapping the sandwich. Each day for 5 days we cook one new non-sandwich lunchbox recipe. We are keeping that theme going on the Facebook Page and [...]

Double Chocolate Hot Cross Buns

Join us A Double Chocolate Hot Cross Bun pull apart? It doesn't get much better this for Easter breakfast or brunch!  This recipe is based of my popular Hot Cross Buns recipe from 2014. This recipe does not have any bread improver in it. If I'm making bread for friends and don't want to risk it being a flop I'll add just a little in. If you want to ensure you have nice soft fluffy hot cross buns I recommend adding 2 teaspoons of bread improver along with the flour. See my bread tips here. Looking for some other delicious hot cross goodies? Try my Hot Cross Loaf or Hot [...]

Coconut Lime Pikelets

This is a recipe that was featured in my 2015 Calendar and it has been so popular I thought I would pop it on the blog as well. Who wouldn't love Coconut Lime Pikelets!? Pikelets are such an easy thing to make and great to get the kiddies involved in. What I love about this recipe is it is very forgiving so if you accidentally add a little extra milk or flour all will be ok. You can certainly increase or decrease the flavours in this to suit your tastes. These Coconut Lime Pikelets are great to wrap and freeze in individual serving portions. Simply pop out and thaw [...]

Healthy Choc Pops

If your kiddies love Coco Pops or similar they will love these! These Healthy Choc Pops are something I have been wanting to bring to life for quite some time but never had a reason to (I already have way too much food in my kitchen most days!). These evolved from my Healthy Chocolate Crackles recipe I posted at the beginning of this year. Bec and I were busily working away on The Breakfast Issue (released today!) of The 4 Blades Magazine and I decided to include this as a last minute addition and I am so glad I did. These are so easy, made of delicious ingredients and [...]

Breakfast Wraps

These wraps are inspired by my mother in law after a recent stay with her in QLD. These are not only delicious for breakfast but make a really quick and easy dinner. I try to always keep a packet of homemade wraps in the fridge so I can make something like this quickly for lunch. Now I have a confession. Not everything in this recipe is made in the tmx for these. I love nothing more than crispy bacon so I do the filling in a small frying pan on the stove. You can of course cook it in your tmx if desired. Vary the fillings to suit your families [...]

Banana Muesli Breakfast Bars

These were something I recently created by fluke. Turned out everyone in the house loved them so I got a bit more creative with them. These are like a biscuit bar, just a little softer due to the banana. These are perfect for a breakfast on the go bar or as a lunchbox snack. Just be mindful of nuts though if these are going to school. These make great biscuits (will make about 48 small biccies) or into 12-18 bars depending on what size you make them. The older kiddies and partner prefer the biscuit version but the baby likes the bar that he can hold on (hang on, [...]

Apple Pancakes with Caramel Sauce

I wouldn't say these are a regular around here but these Apple Pancakes with Caramel Sauce are a  favourite for special occasions! These remind me of my favourite pancakes from The Pancake Parlour. So delicious! You can certainly change up the fruit you use. Pears or banana work really well. Id recommend cooking the banana in a frying pan over medium heat until caramelised though to ensure it keeps its shape. Love this recipe? Fluffy Vanilla Pikelets

These Fluffy Vanilla Pikelets are just that. Fluffy, taste of vanilla and pikelets! Pikelets and pancakes are very popular in our house. the boys love them. What I love about them is they are so easy  to make, make plenty and can be frozen for the lunchbox. These are so soft and fluffy and have a delicious hint of vanilla in them. I use Chef's Choice Alcohol Free Vanilla Extract in these and it gives them a beautiful vanilla flavour. You can of course use vanilla of your choice. Caramalised Buckini Granola

Ok I admit it. I'm addicted to Caramalised Buckinis (buckinis not bikinis!). I was recently sent some by Organics On A Budget and I'm hooked! Those on my personal Facebook profile will know how much I love these at the moment. I said I would write a post on them to explain my obsession so here it is! What are Buckinis I hear you ask? I knew nothing about these prior to receiving them and doing a little bit of research. Organics On A Budget explains it better than I ever could: Caramelised Buckinis are made from buckwheat coated in a delectable selection of Loving Earth ingredients. They are [...]

Strawberry Apple Granola

As many of you know we love granola/toasted muesli in this house. I love making it, my partner loves eating it. Serve this with milk or with yoghurt and fresh fruit. I even use this to make Granola Cookies. Shrove/Pancake Tuesday is here!

Pancake Tuesday is today and of course I have put together a compilation of some of my recipes for you!   Banana Honey Pikelets     Cinnamon Oat Pancakes     Cinnamon Scroll Pancakes     Nutella Pancakes   Oven Pancake Bites with Honey and Cinnamon   Pancake Dippers

Pancake Dippers

I thought these were cute so I had to post!   Surely I'm not the only one that often makes pancakes and they join together and become an "8" like shape? Whilst cooking pikelets yesterday I thought I'd experiment (surprise surprise! I should really just stick to a recipe!).    Whip up your favourite pancake or pikelet batter and pour into a squeeze bottle. Holding the bottle squeeze a small oval shape and then directly underneath it squeeze another. Ensure they are touching and look like a figure 8. You want each oval about the size of a ten cent coin. You want them bite size. After 20-30 seconds, flip. [...]

Banana Honey Pikelets

Pikelets are something I make often for afternoon tea and especially for the lunchbox.    I freeze two together and in the morning of school I pull them out and pop into the lunchbox. They defrost in time for morning tea.   These are yummy on their own but even nicer with some whipped cream, strawberries and sliced banana. A drizzle of melted white chocolate wouldn't go astray either! Too naughty?   This makes approximately 18-20 small child size pikelets.   Some pancake/pikelet inspiration: Banana Honey Pikelets Cinnamon Oat Pancakes Cinnamon Scroll Pancakes Nutella Pancakes   Oven Pancake Bites with Honey and Cinnamon Pancake Dippers   [...]

Oven Pancake Bites with Honey and Cinnamon

Today the boys wanted pancakes for afternoon tea but with a sick bub I couldn't be bothered standing at the stove for multiple batches.   Cooking these in the oven is super quick. It took about 5 minutes at 180 degrees to cook these.    These are bite size and perfect in the lunchbox. They can be frozen also.   Some pancake/pikelet inspiration: Banana Honey Pikelets Cinnamon Oat Pancakes Cinnamon Scroll Pancakes Nutella Pancakes   Oven Pancake Bites with Honey and Cinnamon

Apricot and Coconut Granola

My partner can't decide if this or my Apple and Cinnamon version is his favourite. Lucky I make a new batch weekly and can vary the flavours.    I use apricot purée as the sweetener in this. You can make this by placing apricots with stone removed into the tmx with a tmx measuring cup of water and cook for 10 mins, speed 2, 100 degrees. Blitz to form a purée. Use water to thin it if needed.    You can add more fruit or nuts to this if you like to stretch it out.    My granola recipes: Apple Cinnamon Granola   Apricot and Coconut Granola Fruit and Nut Granola Honey Nut [...]

Chocolate Honey Chia Pudding

Well I thought I'd try my hand at chia pudding at last. I was hoping the kiddies would love it and take it in their lunchbox. Fail! They were far from impressed.   I don't eat breakfast often so I was hoping this might be a good breakfast option for me. I think I still need to get my head around it. The taste is yummy with the addition of raspberries but I feel like I'm eating slug eggs or similar! I'll get use to it though and will try blitzing my seeds first next time. It tastes yummy. That's what counts.   This is a thick set pudding. I don't [...]

Almond Crunch Granola

Yes. ANOTHER granola recipe!    This is a fruitless version shown which I serve to my dried fruit hating kiddies (yet they eat it in their lunchbox!?). I have since added 400g sultanas and 200g diced dried apricot to the mixture since the picture was taken as my partner loves fruit in his granola. I love this because it's so much cheaper than store bought cereals, healthier and it's very filling. My partner finds it fills him up until lunch time.    This make a lot of granola, over 1.5kgs. Halve the recipe if preferred.    My granola recipes: Honey Nut Maple Cinnamon Apple and Cinnamon Fruit and Nut Granola     [...]

Mango and Peach Porridge

Another baby porridge. My 5 month old is loving these. With this one I've actually split the mix in two to have one batch of porridge and a batch of just the fruit purée for the times you just want fruit.    The fruit and porridge versions can be freezed as it thaws and reheats nicely.   The porridge consistency can be easily thinned with a little cooled boiled water or thickened with more oat cereal. Each baby's preference on consistency can differ. Tweak this to suit your baby.    You can cook the oat cereal and fruit all at once but I find it goes too gluggy.    I [...]
