I love anything that is choc peppermint! Have you seen my Choc Peppermint Cheesecake or fudge?I even have a Peppermint Foot Scrub recipe.

Peppermint always reminds me of Christmas!

Choc Peppermint Cookies

Ingredients

Scale
  • 220g butter, cubed
  • 110g sugar
  • 1 teaspoon vanilla bean paste
  • 350g plain flour
  • 1 egg
  • A few drops of peppermint essence or oil, or to taste
  • 30g cocoa powder, more if you want a stronger taste and darker biscuit

Instructions

  1. Preheat oven to 180 degrees. Line two baking trays with baking paper.
  2. Place butter into bowl.
  3. Slowly blitz to speed 4 until pale. Approximately 30 secs.
  4. Add vanilla and sugar.
  5. Blitz on speed 4 for 1 minute.
  6. Agg egg.
  7. Blitz on speed 4 for 30 seconds.
  8. Add flour, cocoa powder and essence. Blitz on speed 4 until a soft dough forms.
  9. Roll into small balls. Place onto tray spaced apart. Press down with a fork.
  10. You can roll out and cut shapes out. You may find you just need a little flour dusted on the bench and on the rolling pin (If your dough is sticky add more flour and knead by hand until you reach your desired texture).
  11. Bake until lightly golden. Approx 15 minutes.
  12. They will be slightly soft when pulled out of the oven but firm up on cooling. Let cool on a cake rack.
