This week we are running another round of #freezertolunchbox 5 day challenge. This edition is all about hidden veggies. Yesterday we cooked our 12 Veggie Hidden Pizza Wheels. The tomato paste we made is so delicious I just had to share it on the blog this week. If you missed the challenge and want to know when another is running sign up to our notification mailing list!
This tomato paste is delicious and jam packed full of veggies – 10 in fact! This will make a large amount so its perfect to freeze and keep handy for the next pizza night and when tomato paste or pizza sauce is needed. Its a great way to add some additional veggie to the meal.

10 Veggie Tomato Paste and Pizza Sauce
Description
This will make approximately 1.5 cups of sauce
Ingredients
Gather these
- 3 garlic cloves, peeled
- 1 onion, peeled and quartered
- 1 leek, washed and roughly sliced
- 1 radish, halved
- 180g carrot, roughly chopped
- 130g zucchini, roughly chopped
- 50g celery, roughly chopped
- 1 small red capsicum, seeds removed and roughly chopped
- 15g baby spinach leaves
- 600g tomatoes, diced
- 2 teas dried oregano
- 2 teas dried parsley
- 1 Tbsp sweet paprika
- 20g olive oil
Instructions
Then mix like this
- When cooking hot liquids or sauces in your thermo mixer, always exercise caution. Be sure to read your machines user and safety manuals prior to cooking as every machine differs.
- Place all vegetables except tomatoes into bowl. Speed 7 / 6 seconds.
- Add tomatoes, dried herbs, paprika and olive oil. 40 minutes / 100C / Speed 2. Place internal steaming basket on the lid to prevent splatters.
- Then cook 15 minutes / Steaming Temperature / Speed 2. Place internal steaming basket on the lid to prevent splatters.
- Once cooked, carefully pour the paste into a heatproof bowl and allow to cool slightly or completely before using on your favourite pizza dough.
Or cook like this
- When cooking hot liquids or sauces always exercise caution. .
- Place all vegetables except tomatoes into a food processor. Process on high speed for 5 seconds. Add mixture to a large saucepan.
- Add tomatoes, dried herbs, paprika and olive oil. Cook on a medium heat, stirring often until the moisture has evaporated and you have a thick paste like sauce. This may take up to an hour.
- Once cooked, carefully pour the paste into a heatproof bowl and allow to cool slightly or completely before using on your favourite pizza dough.
