Fathers Day is just around the corner so what a perfect excuse to make Dad his very own batch of Rocky Road! Dad’s Fully Loaded Rocky Road is jam packed full of pretzels, roasted peanuts, marshmallows, jersey caramels and coconut! It doesn’t get much yummier than this! Sorry Dads. I wasn’t able to incorporate beer into this one!

This is such a versatile recipe – simply swap out what you don’t like with something you do. It is so incredibly easy and a perfect recipe for the kiddies  to help with!

Dad’s Rocky Road

Description

This makes 9 large slices or 20 mini slices.


Ingredients

Scale
  • 200g milk chocolate melts
  • 50g roasted peanuts
  • 70g salted mini pretzels, 9 extra for topping
  • 100g white marshmallows, sliced in half
  • 50g jersey caramels, sliced in half
  • 40g shredded coconut
  • 80g white chocolate melts

Instructions

  1. Line a small square baking tray with baking paper.
  2. Place the chocolate bowl. 3 minutes / 60 degrees / speed 2. If there are still some lumps that is OK as they will add to the rocky road. Allow to cool slightly.
  3. Add peanuts, pretzels, marshmallows, jersey caramels and coconut to bowl. Mix on reverse / speed 3 until just combined.
  4. Pour mixture into the prepared tin.
  5. Place white chocolate into clean, dry bowl. You may wish to do this in the microwave instead. 3 minutes / 60 degrees / Speed 2.
  6. Using a piping bag or a spoon, drizzle the white chocolate over the rocky road and place additional pretzels over the top.
  7. Place into the fridge to set for approximately 1.5 hours+. Cut with a hot knife and place into a box or cellophane bag for Dad!

Notes

  • If you have a nut allergy simply omit the peanuts.
