Glitter Bunny Biscuits

Ingredients

Scale
  • 250g butter, cubed
  • 90g sugar or less if topping each shortbread with sprinkles
  • 1 tsp vanilla bean paste
  • 100g rice flour
  • 300g plain flour

To decorate

  • 150g white chocolate, broken up
  • coloured “glitter” sugar or sprinkles of choice

Instructions

Then mix like this

  1. Preheat oven to 180C. Line two baking trays with baking paper.
  2. Place all biscuit ingredients into bowl. Speed 6 / 30 seconds or until a dough forms. If a dough isn’t forming keep mixing to allow the bowl to warm and butter to soften.
  3. Sprinkle bench with a little flour and slightly knead dough. Roll out into 0.5 – 1cm thickness.
  4. Flour small rabbit cookie cutters lightly and cut shapes from the dough.
  5. Place shapes on baking trays leaving room between each one.
  6. Continue to knead and roll dough and cut shapes from until all the dough is used.
  7. Bake for approx 12-15 mins or until slightly golden. The time will depend on what shapes you used and their size.
  8. Allow to cool completely.
  9. Place white chocolate into clean, dry bowl. 5 minutes / 60C / Speed 2.
  10. Pour into a bowl.
  11. Dip one side of the biscuit into the white chocolate and sprinkle glitter sugar on top. Place back onto the tray to set.
  12. Repeat for all bunnies. Work fast as the chocolate will cool quickly.

Or cook like this

  3. Sprinkle bench with a little flour and slightly knead dough. Roll out into 0.5 – 1cm thickness.

  5. Place shapes on baking trays leaving room between each one.
  6. Continue to knead and roll dough and cut shapes from until all the dough is used.
