I was wondering what recipe to share with you as the final recipe of the week. This week I have posted a new lunchbox recipe each day on the blog and whilst they have all been very budget friendly and easy, this one is a real winner.  I decided I would share this super easy recipe for Ham and Cheese Roll Ups as this is one that the kiddies love getting involved with. This makes for a great change from the usual sandwich or bread roll.

Ham and Cheese Roll Ups

Description

Makes approximately 30 mini roll ups


Ingredients

Scale

Gather these

  • 3 mountain bread wraps or TRLTMT tortillas*
  • 300g shaved ham of choice
  • rocket or baby spinach leaves

Cheese spread

  • 250g spreadable cream cheese
  • 2Tbsp natural yoghurt or sour cream
  • 1 bunch of chives
  • 6 basil leaves
  • pinch of salt and pepper, optional

Instructions

Then mix like this

  1. Place all cheese mixture ingredients into bowl. Speed 8 until smooth.
  2. Spread the cream cheese mixture over the mountain bread sheets.
  3. Top with rocket, ham (and extra salad ingredients of choice if desired).
  4. Roll bread up to form a log. Carefully slice into 6-8 rounds with a sharp knife.
  5. Thread rounds onto a skewer. Always check that your school allows skewers first.
  6. Leftover roll ups will keep in the fridge for 2 days.

Or cook like this

  1. Place all cheese mixture ingredients into a food processor. Process on a medium to high speed to combine.
  2. Spread the cream cheese mixture over the mountain bread sheets.
  3. Top with rocket, ham (and extra salad ingredients of choice if desired).
  4. Roll bread up to form a log. Carefully slice into 6-8 rounds with a sharp knife.
  5. Thread rounds onto a skewer. Always check that your school allows skewers first.
  6. Leftover roll ups will keep in the fridge for 2 days.
