I was wondering what recipe to share with you as the final recipe of the week. This week I have posted a new lunchbox recipe each day on the blog and whilst they have all been very budget friendly and easy, this one is a real winner. I decided I would share this super easy recipe for Ham and Cheese Roll Ups as this is one that the kiddies love getting involved with. This makes for a great change from the usual sandwich or bread roll.

Ham and Cheese Roll Ups
- Total Time: 15
Description
Makes approximately 30 mini roll ups
Ingredients
Gather these
- 3 mountain bread wraps or TRLTMT tortillas*
- 300g shaved ham of choice
- rocket or baby spinach leaves
Cheese spread
- 250g spreadable cream cheese
- 2Tbsp natural yoghurt or sour cream
- 1 bunch of chives
- 6 basil leaves
- pinch of salt and pepper, optional
Instructions
Then mix like this
- Place all cheese mixture ingredients into bowl. Speed 8 until smooth.
- Spread the cream cheese mixture over the mountain bread sheets.
- Top with rocket, ham (and extra salad ingredients of choice if desired).
- Roll bread up to form a log. Carefully slice into 6-8 rounds with a sharp knife.
- Thread rounds onto a skewer. Always check that your school allows skewers first.
- Leftover roll ups will keep in the fridge for 2 days.
Or cook like this
- Place all cheese mixture ingredients into a food processor. Process on a medium to high speed to combine.
- Spread the cream cheese mixture over the mountain bread sheets.
- Top with rocket, ham (and extra salad ingredients of choice if desired).
- Roll bread up to form a log. Carefully slice into 6-8 rounds with a sharp knife.
- Thread rounds onto a skewer. Always check that your school allows skewers first.
- Leftover roll ups will keep in the fridge for 2 days.
