This is another favorite in our house with the kiddies. This is a great easy weeknight meal as it really requires very little effort and the kiddies devour it. Its a great dish to be able to sneak it some extra vegetables as well. 

We have it on its own as a main meal however it would make a great side dish for larger families.

Hidden Veggie Carbonara

A hit with the kiddies!


Ingredients

Scale
  • 2 garlic cloves, peeled
  • 2 zucchinis, roughly chopped
  • 100g cauliflower, roughly chopped
  • 6 slices short cut bacon, diced
  • 160g uncooked dried tagliatelle
  • 450g warm water
  • 200g thickened cream
  • 1 egg, lightly beaten
  • 1 mc grated cheese (Tasty or Parmesan)

Instructions

  1. Place garlic and vegetables into bowl. Chop on Speed 8 for approx 10 secs until very fine.
  2. Add bacon to bowl. Cook on 100 degrees, 2 min, reverse, soft spoon.
  3. Add pasta, cream and water.
  4. Cook at 100 degrees, 14 min, reverse, soft spoon. I use the spatula and give it a bit of a stir every 4-5 mins just to ensure the pasta is broken up.
  5. With 1 min to go add beaten egg and cheese. Add salt and pepper to taste.
  6. Serve. Sauce may appear runny but thickens quite quickly. It’s best eaten immediately.

Notes

  • Other veg can be added or substituted. Spinach and leek are great veggies to use.
  • Diced chicken could be added also. I would do it with the bacon and cook for 10 mins at 100 degrees, reverse, soft speed.
