I’ve made a few batches of muffins today for my partner to take to work tomorrow. These are delicious and so easy in the Thermomix. They freeze well too so make an easy snack for the lunchbox.

Made these today with only 100g of caster sugar, strawberries instead of raspberries (as I had a punnet that needed to be used) and also added some chia seeds. My 4.5 year old just came into the kitchen and said ‘yum Mummy, I love these!’ and Mr almost 2 has devoured 2 so far. Made 14 normal sized muffins and 12 mini muffins so will definitely be freezing some for the lunchbox!
so I had no raspberries but I did have mixed berry frozen fruit so I blended this down a bit and used them instead of raspberries . love them
Delicious! Added chunks of white chocolate to the mix and it was extra yummy! Will definitely make this again – thanks Peta!
yummy! I didnt have any raspberries so used blackberries, so good!! I have made three batches this week and they keep disappearing! thanks Peta for another awesome recipe!
I made these but used 100g almond meal cos I ran out of flour. Put in a bit of baking powder and it worked. Next time I’d use less sugar though. 200g seems like a lot.
