This is the recipe for the mince component for nachos. This would work for tacos, Chimichangas or the Tortilla Pie I posted the other day.
This is a budget friendly meal as it only uses 250g of mince and feeds a family of four to eight. You bulk this meal out with lots of veggies and red lentils. If you want a bigger quantity just add more veggies or lentils.

thank you.. my kids inhaled this!! and I didn’t feel too guilty about giving them treat as there was sooo much goodness packed in there ๐
Love this meal!! It’s now become a regular family favourite along with an easy avocado dip, some salsa and sour cream. I make your taco seasoning and have the level of spiciness just right! It easily feeds my family of 9 with left-overs which tasted great served on top of some fettuccine!!
Do you reckon the thermomix could handle doubling the mixture?
No not for this one sorry.
Another awesome recipe Peta – thank you!!! I halved the recipe with no problems, and also cooked the mince in the basket so it was lovely and chunky for my (fussy) husband. Thanks for turning a not-so-healthy meal into something we can enjoy regularly.
This would have to be one of the B E S T nachos recipes I have come across and the salad/veggie dodger boyfriend loved it (hidden veggies and all) A big hit in this house ๐
Thanks for all your awesome work Peta! Wonderwoman
Looking forward to trying this!! At step 3 what speed is it? Thanks ๐
I love nachos, and adding the extra veggie goodness makes me feel better about serving this up. Delish!
We love this recipe! so much healthier than just plain beef and spice! This is a regular in my rotation as its so versatile!
