Just a slight twist on an old time favourite. I’ve added chia seeds and flaxseed meal to this to add some extra goodness.
I topped mine with caramel frosting but for my sons lunchbox it is un iced. It freezes well.

Weetbix Slice with Hidden Goodies
Ingredients
Scale
- 140g wholemeal self raising flour
- 100g coconut
- 20g chia seeds
- 20g flaxseed meal
- 4 Weetbix, crushed slightly
- 80g brown sugar
- 145g butter, cubed
Instructions
- Preheat oven to 180 degrees. Line a lamington tin with baking paper.
- Place everything into bowl.
- Blitz on speed 4 for 1 minute until a soft dough forms.
- Press into tin.
- Bake for 25 minutes or until golden.
- Cool on wire rack.
HI Peta, my son doesn’t like the coconut in slices/muffin etc- but i’m looking for ideas for lunch box snack- I’m assuming that the coconut is what keeps the bar together- any ideas of what I can replace it with?

Very tasty. Is it supposed to be a crumbly slice? Mine was crumbling everywhere while trying to cut it. A bit delicate.
Made this today. Used wheatgerm in place of flaxseed meal. Very nice – haven’t given to the kids to try yet, but I think I will probably have to ice it for them. Was thinking a light drizzling of chocolate.
Can anyone tell me if this slice is freezable? Such an easy one to whip up and I am trying to stockpile the freezer. 🙂

This morning there’s only four small slices left. I’ve got lots of weetbix crumbs to make up so will be making for the freezer for lunches and our Easter camping trip. I didn’t have flaxseed so just left it out, iced using half quantity of caramel icing
