This recipe belongs to a friend of mine and is the best banana bread I’ve ever had. I used to make this weekly but lost the recipe in a house move and couldn’t remember the recipe correctly. Amanda shared it with me again and it’s back to being a weekly bake. 
 
I have converted it and tweaked it slightly. Best thing is it only takes 30 seconds to make the batter with a thermomixer! 
 
I make and freeze in slices for the lunchbox or whip it up last minute when we are expecting visitors.

30 Second Banana Bread

Ingredients

Scale

Gather these

  • 3 very ripe bananas
  • 155g self raising flour
  • 80g sugar
  • 1 egg
  • 2 tsp golden syrup or honey
  • 1 tsp vanilla bean paste
  • pinch of salt

Instructions

Then mix like this

  1. Preheat oven to 160C. Line a loaf tin with baking paper.
  2. Place bananas and syrup into bowl. Speed 4 / 5 seconds.
  3. Place remaining ingredients into bowl. Speed 3 / 10 seconds. Scrape down. Repeat.
  4. Pour into a lined loaf tin.
  5. Bake for 40 minutes or until cooked through. You may need a little longer in the oven as all ovens heat and cook differently.
  6. After 15 minutes remove banana bread from tin and place on wire rack to cool.

Or cook like this

  4. Pour into a lined loaf tin.

  6. After 15 minutes remove banana bread from tin and place on wire rack to cool.

    I loved this. I put it in little muffin tins and added a handful of white choc drops on the second blitz.. Delicious!!!

    Delicious! Only had 2 bananas but they were large and it didnt cause a problem!!

    Best banana bread! We’re dairy-free at home and this gets inhaled by my son as fast as I can make it. I double it to make a really big loaf and the only thing that stops me from making more is running out of bananas!!
