You really can’t beat a coconut, raspberry and lime combo can you? They all work so well together.

This recipe is based off my 10 Second Coconut Bread. Its a delicious bread that you can whip up in no time at all with some basic ingredients. The raspberries and lime adds a nice twist to my traditional bread. I hope you like it as much as we do!

Raspberry and Coconut Lime Bread

Ingredients

Scale

Gather these

  • 300g self raising flour
  • 160g desiccated coconut
  • 100g sugar or sweetener of choice, can reduce
  • 70g softened coconut oil or melted butter
  • 500g milk of choice
  • 80g frozen raspberries
  • fine zest from 2 limes

Instructions

Then mix like this

  1. Preheat oven to 180C. Line or grease a large sized loaf tin.
  2. Add all bread ingredients into bowl except raspberries. Speed 5 / 10 seconds.
  3. Add raspberries to the bowl and mix with a spoon to just combine.
  4. Pour batter into prepared tin.
  5. Place raspberries on top of the batter, pushing the berries into the batter slightly.
  6. Bake for approximately 45 – 60 minutes or until slightly golden on top and cooked through. You may need to cover with aluminium foil if it is browning too quickly.
  7. Cool on a wire rack and slice.
