Chewy Anzac Biscuits

Description

These can be frozen once cooked.


Ingredients

Scale
  • 100g butter
  • 2 Tbsp golden syrup
  • 95g rolled oats
  • 90g desiccated coconut
  • 160g plain flour
  • 60g brown sugar
  • 70g sugar
  • 2 Tbsp boiling water
  • 1 tsp bicarb soda

Instructions

Then mix like this

  1. Preheat oven to 180C. Line a baking tray with baking paper.
  2. Place butter and golden syrup into bowl. 9 minutes / 100C / Speed 2.
  3. Add remaining ingredients into a big bowl. Pour over hot liquid. Carefully combine.
  4. Place a tablespoon of mixture into the tray. Flatten slightly.
  5. Repeat for all mixture. Ensure you leave space between each biscuit as they will expand.
  6. Bake for 16-20 minutes. Allow to cool slightly before cooking in a wire rack.

Or cook like this

  1. Preheat oven to 180C. Line a baking tray with baking paper.
  2. Place butter and golden syrup into a medium saucepan. Melt over medium heat.
  3. Remove from heat and add bi carb soda. Mix well.
  4. Add remaining ingredients into a big bowl. Pour over hot liquid. Carefully combine.
  5. Place a tablespoon of mixture into the tray. Flatten slightly.
  6. Repeat for all mixture. Ensure you leave space between each biscuit as they will expand.
  7. Bake for 16-20 minutes. Allow to cool slightly before cooking in a wire rack.
