Roasted Capsicum Baked Chicken and Rice

Join us This was a completely random dinner I made up a few weeks ago based off a dinner recipe I would make all the time back in the day. This ended up tasting so good, we cook it often now when we want something fairly simple. It's a very versatile dish: This roasted capsicum chicken is great served with extra steamed veggies and some crusty buttered bread. The meat component is great to BBQ as well. Simply cook each breast fillet on the BBQ for several minutes each side until cooked though. Served with BBQ'd potatoes and some salad. YUM! Serve baked chicken over mash, pasta, cauliflower rice or [...]

Quick Chicken San Choy Bow

Join us This recipe is loosely based off my Beef San Choy Bow recipe posted in 2014 but revamped with some new flavours. What I love about this dish is you can serve it as is, in lettuce cups, over steamed rice or alongside some delicious steamed veggies. It is so versatile (and SO delicious!). This is great served hot or cold! I love it cold the next day served with salad veggies. I have cooked this in a large wok but utelised my thermomixer for some of the chopping. The reason for this is I prefer the final result. If you are wanting a TMX method for this, my [...]

Spinach, Pesto and Mozzarella Rolled Roast Chicken

Join us A rolled chicken roast is always a regular on our Easter menu every year. Gone are the days of buying an expensive one from the local chicken shop. You can easily make one from scratch in no time at all and very little effort. Despite looking impressive, this is one of the easiest meals you will ever make! What I love about it is you can change the filling to suit your tastes and what you have in your fridge. It can be as basic or as decadent as you like. Serve with some roast and steamed veggies and fresh crusty bread and your Easter dinner is sorted. [...]

Created with Jamie | Crunchy Garlic Chicken Fillets with Pesto Potatoes

Product was provided by Woolworths for this recipe creation* Those that are familiar with my blog know I use packet ingredients in some of my recipes. I still love and buy take away food. I still buy pre-prepared foods. As much as I love creating things from scratch where I can, not everything we eat is and that's okay. We sometimes get caught up in thinking we have to make everything from scratch in our magic $2000+ machine but that isn't the case at all. You use it how you see fit for your family and household. Whatever works I say! I am a mum of three young and [...]

Puttanesca Meatballs on Zoodles

This recipe comes from The Steaming Issue of The 4 Blades Magazine. This was probably my most favourite issue  to create aside from our current Breakfast Issue. I loved creating new and exciting dishes for the steaming attachment/varoma. This is on piece of a Thermomix I find people don't use enough for various reasons. These meatballs are packed full of flavour and smell delicious. You can easily have them on their own as a starter or serve on zoodles for a healthy and fresh option. Prefer pasta? Don't worry! My family hear you big time. Of course you can serve these on pasta as well. Try my Homemade Pasta Dough [...]

Chicken Larb

Finally I am back and posting recipes! March was a quite month in TRTLMT HQ as we had several major events happen with the family so my focus was there BUT things have settled down and I am back on the TRTLMT recipe train. I have so many recipes to post now! YAY! This is one of my most favourite Thai dishes. I love Chicken Larb. I love how fresh it tastes and how light it is to eat especially in the warmer months. Mini Chicken Kiev Bites

We love Chicken Kievs here. These Mini Chicken Kiev Bites are a twist on these. These are a delicious bite size chicken kiev perfect for parties or events when finger food in on the menu. I cook these Mini Chicken Kiev Bites in the Airfryer and they are so moist inside but delicious and crunchy on the outside. This is my favourite way to cook them. Instructions are given for shallow frying and oven also. Dont have a tmx? Simply use your food processor on speed high in place of the tmx. Breakfast Wraps

These wraps are inspired by my mother in law after a recent stay with her in QLD. These are not only delicious for breakfast but make a really quick and easy dinner. I try to always keep a packet of homemade wraps in the fridge so I can make something like this quickly for lunch. Now I have a confession. Not everything in this recipe is made in the tmx for these. I love nothing more than crispy bacon so I do the filling in a small frying pan on the stove. You can of course cook it in your tmx if desired. Vary the fillings to suit your families [...]

Not So Baked Potatoes

Oh my goodness these are my most favourite thing to make at the moment. These are my "cant be bothered to make potato bake or salad so this is the next best thing" cheat meal. We served these on Boxing Day along with salad, ham and chicken. Was so delicious and easy. We eat these as a side or as a main. They are as filling as you make them. Below I have included a list of topping ideas. The list is endless.
