Bolognese Gnocchi Bake

     My Bolognese Gnocchi Bake is a recipe I used to make all the time years ago when the kiddies were younger. It was relatively cheap - mince, a bottle of tomato pasta sauce, packet gnocchi and some cheese. It was an under $10 dinner and so easy. Tomato and Roast Capsicum Sauce

    Just an easy recipe tonight as I use this sauce in an upcoming recipe that will be posted here. This is a great sauce to make up and freeze into 2-3 batches for future use in main meals or smaller batches. It is great stirred through cooked pasta with a little shaved or grated cheese. It makes a great bolognese sauce with beef or chicken mince and it tastes delicious on pizzas as a base sauce. Spoon over cooked chicken breasts or use as a dip for nuggets and the like. So versatile!

Frozen Pizzas and Garlic Bread

    Yep. My Freezing adventures continue! Earlier this week there was Freezer Muffin Mix and Frozen Biscuit Dough Balls but tonight is pizza! No more frozen boxed pizzas here! Chicken, Pumpkin and Spinach Lasagne

  I love lasagne. I thought I'd change up the flavours a bit. My partner was not impressed with the thought of steering away from traditional beef lasagne. Now, he did try it but of course he didn't loooove it.  He said it was tasty but preferred beef. The kiddies on the other hand devoured it. They couldn't get enough. I left my pumpkin in big chunks. Steamed Chicken Breasts with Honey Mustard Sauce

   My partner loves anything honey mustard so this is a popular dish. You can certainly cook all your veggies on the stove and double or triple the amount of chicken and sauce. Just remember when doubling you will need to increase the time by 20%. Double the sauce will be plenty though. If you want a subtle tasting sauce, reduce each mustard component by half. You can serve the chicken and sauce over rice or pasta if desired. Instructions for the stove top are below.

Fajitas with Paprika Garlic Wraps

    My boys love anything in a wrap. Its a great way  to get them to eat more salad. These are my very easy fajitas. I'm not a big red meat eater so don't eat these but the family love these including the 13 month old who likes to eat the strips on their own.  I lost count of how many my 6 year old ate the first time I made them. Cheese Filled Meatballs with Steamed Vegetables

    Many years ago I worked with two amazing friends who lived together (Hello Jami and Tash if you see this!). I'm not exactly sure how this started but each Wednesday I would cook dinner and deliver it to them. I loved it as it meant I was cooking new things all the time. This was one of their favourites meals. I have served it with steam vegetables for the photo but can be served with pasta, zoodles or rice.   I have included instructions below.

Chunky Style Bolognese

   I am always asked for a chunkier style bolognese. I posted last year about using the rice basket for cooking mince for a chunkier result  but I thought I would write up an actual recipe which may be more helpful. Amatriciana Sauce

  Who wants dinner on the table in under 20 minutes and costs less than $10 to serve 4-6? This is the recipe for you. This is one of my favourite pasta sauces served through large pasta shapes (so teh baby can devour them - he loves this!) or through zucchini noodles.  It is so versatile and makes a great pizza base sauce too.    One thing that we will still buy in packet form is Beef Stroganoff. My partner loves it. Honey Soy Meatballs with Dipping Sauce

  Meatballs are always a hit in our house as they are easy to make, kid friendly and only require a little bit of salad on the side. These are often my "Eek! I haven't started dinner yet" meal. Lamb and Zucchini Mince with Cous Cous

  This Lamb and Zucchini Mince with Cous Cous is a dish our cook at work used to make all the time and I loved it (I don't eat much red meat but when I was pregnant I couldn't get enough of it!). Chicken and Carrot Sausage Rolls

    We love sausage rolls in our house. They are my last minute dinner recipe and a great way to use up lots of vegetables as the base mix is so versatile. These are great as they are full of carroty goodness. You can substitute it for sweet potato or pumpkin if desired. I make batches of these and keep them in the freezer for a quick reheatable dinner. Sausage and Bean Casserole with Mash

Creamy Tomato Tuna Pasta

   Need dinner on the table in under 20 minutes? This is the meal for you. What is great about  this Creamy Tomato Tuna Pasta is there isn't anything fancy in it so it's budget friendly and it makes a lot. This is enough sauce for 400g of pasta but you can certainly double this sauce though if you need to feed more. Mini Meat Pies

   Who doesn’t love mini meat pies? They are so quick and easy to make at home. I use puff pastry for both the base and lids to these, however you can use shortcrust for the bases and puff pastry for the lids. I use store bought pastry but your EDC has great recipes for these. Beef Sliders

   Who doesn't love Beef Sliders? Little bite size burgers are always a winner. They are great for parties, for a fun dinner served with homemade chips or in the lunchbox. Vegetable Risoni Bake

   This Vegetable Risoni Bake is something that is so quick and easy to whip and provided you have a packet of risoni the rest of the ingredients are generally found in most fridges and pantries. Parmesan Garlic Chicken Strips

   My Krispy Fried Chicken is very popular here but I thought I would try something just a little different recently. These Parmesan Garlic Chicken Strips are a crunchy and delicious alternative. Creamy Ham and Spinach Pasta

  Today I posted two new kiddy friendly recipes, 4 Can Savoury Muffins and Lunchbox Biccies,  so why not add a kiddie friendly dinner too! This is a "use the scraps from the fridge" kind of dinner.
