Pasta Dough

This is probably my most favourite thing to make at  the moment. So much so I make it on week nights. Once you get the hang of rolling and cutting the dough it becomes very quick to cook. If I am in a rush I'll roll my dough in my pasta maker and then cut into big tagliatelle type strips with a sharp knife. Cook and top with your favourite sauce.   Mix and knead your dough the traditional way - by hand. Simply place you flour in the bench, make a well in the middle and add the remaining ingredients and use your fingers to start mixing the [...]

Mini Calzones

Anything with a bread dough and filling is delicious right? The other night the boys wanted pizza pops but I thought we would do something a little different. Mini calzones are so easy and great for little hands to hold for lunch. My boys take them in their lunchbox for lunch and eat cold.  Simply roll out 20 small rounds of pizza dough of choice. Roll thinly. I use the below recipe of mine. This is plenty for 20 mini calzones. You can halve the recipe but I make a full batch and freeze half. For 20 mini calzones you will need 250g cheese and 1/2 [...]

Tarragon Chicken

I spent some time up in QLD at my lovely in laws place over Easter. It was the best time AND the food was delicious! (its the most important thing right?! haha). I love seeing what others cook. This was a meal that my mother in law cooked and I knew my boys would love it so had to try it at some stage.  This is my version of the meal and is a little different based on what I had in the pantry at the time. This is a great recipe to use up leftover Shredded Chicken you may have. If you don't have any shredded chicken you [...]

Savoury Mince and Red Lentils

Feed a family of 4-6 on 250g mince? Easy done with my Savoury Mince and Red Lentils. We love red lentils and they are budget friendly and really bulk out the meal. This has become my favourite last minute weeknight dinner. It is so quick, uses basic ingredients and tastes so good.  Its perfect for kiddies. There is enough flavour without it being too rich like some tomato based meals can be. The mince mixture could be served over pasta or rice, in pies, with mashed potato and steamed veggies, as a lasagne filling, in canneloni etc. It goes so well with many things. This can be frozen, thawed [...]

Curried Pumpkin and Red Lentil Soup

I LOVE this Curried Pumpkin and Red Lentil Soup and it is so easy to make in your Thermomix or similar machine. There is nothing like soup and fresh homemade bread in these cold months. Pumpkin soup is a huge hit here (remind me to post my basic but delicious pumpkin soup recipe soon too). Actually that is a lie. It's a huge hit here... with me. No one else seems to like it so it tends to be a soup I make when I have people over or to store in the freezer for a last minute lunch or dinner for myself. Soups freeze, thaw and reheat so [...]

Veggie Bam Sausage Rolls

My boys looooooove sausage rolls and I often make chicken ones (lots on the recipe index) but thought Id try something different earlier this week. These Veggie Bam Sausage Rolls were a massive hit! These sausage rolls have a big portion of veggies in them but still has a high meat ratio for all those meat eaters. The vegetables are actually quite tricky to spot. I love these because it has veggies in the mix that my kiddies wouldn't eat normally as is. You can vary the vegetables you use. Spinach, capsicum and celery are always good additions. I made up a full batch and froze half of these [...]

Thai Coconut Chicken Parcels

I'm not usually a huge fan of coconut but boy am I loving everything chicken and coconut at the moment, particularly with Thai flavours. I recently made my Thai Chicken Sausage Rolls and the flavours inspired these parcels. They are mild enough for the kiddies. They have a good kick of lime so if you aren't a fan of lime, reduce the amount. If you like things a little hotter you can certainly add more chilli to suit your tastes. The coconut chicken mixture is delicious on rice or rice noodles if you prefer those over pastry. You could certainly make pies rather than parcels as well. The mixture [...]

Chicken Wonton Noodle Soup

I have always wanted to make this and one night a few weeks ago I was bored so thought I'd give it a whirl! I've never had wonton soup in my life before so this could be way off the mark on how it should taste and look like but it was delicious nonetheless (and fun to make! I feel wonton folding is my calling in life now). I think the key to this is using a really good stock or broth. This is what will give it the most flavour so don't skimp and save on it. You can alter the filling to suit what you like. Prawns could [...]

Pizza Wheels

Those that know me know I love dough. I love creating new things that are a little different to your standard loaf or pizza. I originally saw this as just a picture  with no recipe or instructions months ago on Pinterest and of course started recreating it in my head using my recipes and preferred ingredients. This is a fun alternative to your usual pizza night. They look impressive but really aren't much more work. Maybe an extra few minutes? And once you get the hang of making them they are so quick you will make these over regular pizza bases. This uses the same amount of dough I [...]

Thai Chicken Sausage Rolls

We love chicken sausage rolls. They are so easy to make for a last minute dinner or to keep stocked in the freezer. These are my Thai inspired sausage rolls.  My other chicken sausage rolls: Chicken and Roasted Capsicum Sausage Rolls Chicken and Vegetable Sausage Rolls Parmesan Chicken Sausage Rolls

Creamy Garlic Chicken Soup

I love soup, chicken and garlic so this is a match made in heaven for me. Whilst this soup is somewhat creamy, it is dairy free. I've used potatoes to make this soup thicker and a creamy texture. You can leave the potato out if you are wanting a thin soup or you can add some cream at the end. I love this as it is a fairly cheap meal to make as it only uses a single 300g chicken breast and two or three potatoes to make the bulk of it. I have used store bought stock but you can use a homemade version or some vegetable stock [...]

Cheese and Herb Bread Twist

I posted a photo of this the other day before baking and it certainly was popular. There is something about homemade bread that gets people excited. This may look difficult but it really is easy. Remember, I'm far from fancy! This makes a huge twist that will serve up to 8 adults. You can certainly halve this recipe to feed a smaller family. You can always split the dough into two, eat one and freeze one. This was still so soft and fluffy the next day so it's perfect to make the night before a lunch gathering or to take along to a BBQ. I wont say how much [...]

Broccoli and Cannellini Bean Soup

I'm addicted to soup in winter. My favourite soup at the moment is my Bacon and Red Lentil Soup. I'm not sure I can survive the whole of winter eating just it so Ive been experimenting. So many new soup recipes to come. My other soup recipes: Bacon and Red Lentil Soup Broccoli and Cannellini Bean Soup Chicken Wonton Noodle Soup Creamy Garlic Chicken Soup Potato and Bacon Soup What I love about soup is you can often just chuck anything in with a bit of good quality stock and more often than not you get a delicious soup. Soups are great for the budget and combined with some [...]

Coconut Chicken Strips

These are made without a tmx but they are so quick and easy I couldn't not post them. My kiddies LOVE chicken strips. I normally make them my Krispy Fried Chicken (or Popcorn Chicken version) which they devour but its nice  to have other options. These are so easy. Its as simple as combining 1 cup of unsweetened shredded coconut and half a teaspoon each of salt and pepper (optional). You can add other seasonings of choice. Cut two chicken breasts into 4 or 5 strips each. Coat chicken strips in coconut and place on an oven tray. Cook at 180 degrees for 25 minutes or until cooked through and [...]

Bacon and Red Lentil Soup

This morning on our Facebook Page I asked what soup recipe of four you wanted posted and this was the winner... I think. There were quite a few responses to sift through. All recipes will be posted over the next few weeks. My other soup recipes: Bacon and Red Lentil Soup Broccoli and Cannellini Bean Soup Chicken Wonton Noodle Soup Creamy Garlic Chicken Soup Potato and Bacon Soup I'm addicted to bacon and red lentils so this is a match made in heaven. I loooooooove this soup. What I love most is it can be as thin or as thick as you like. Simply add more potato or lentils [...]

San Choy Bow

I have been meaning to thermo-fy  this for awhile but never got around to it until recently. This is something I have only had a handful of times but has always been delicious, even for me who barely eats red meat. The sauce gives it a great flavour. The crisp lettuce and crunchy veggies make it a lighter meal. You can of course vary the veggies you use to suit your tastes. The kiddies don't like to eat these as lettuce cups so they have their mince on top of steamed jasmine rice and topped with the veggies. They love it. The mince is something you can freeze and reheat [...]

Chickpea Patties

These are delicious! Even the non chickpea fans of the house are impressed. My 10 month old who hates food can't get enough of them nor can I. These will be a regular in the freezer. These are easy and achievable for a busy work night meal. The mix takes no time at all. Just shape and fry. I serve as is with some salad or inside my Herb and Garlic Wraps or Spinach Wraps with salad and a little cheese or sweet chilli sauce. These can be frozen once cooked and reheated too so make for a very quick meal. The kiddies didn't mind these cold the next day [...]

Chicken Broccoli Nuggets

My kiddies love nuggets. I love that I can hide a range of goodies in them and they gobble them down. Now the broccoli isn't entirely hidden. You can see green specks through the nugget but the kiddies didn't even notice especially once dipped into sauce. These are great to make in bulk and freeze either before or after the cooking process. It makes for a super quick meal. I even put these in the lunchbox much to  the kiddies delight. Because of all the flavours in this, you can barely taste the broccoli.

Honey Mustard Chicken Bites

Honey Mustard chicken is a big hit in this house. I thought I would do a bit of a twist. These were quite tasty served along with salad but you could shape them much bigger and use as a burger patty or serve in tortillas or spinach wraps. These can be frozen and popped into the lunchbox or reheated for a quick lunch or dinner. Use this mixture for meatballs or sausage rolls.

Mince and Veggie Spaghetti Bake

Love lasagne but want something just a little quicker and something the kids with LOVE? This is a recipe I have been making for well over 10 years. Anything with white sauce is always a hit in my books. There is lots some yummy veggies hidden in this so great for children and which child doesn't love slurping up spaghetti when mum or dad aren't looking. Adapt this recipe to suit you. Use any type of mince you like and vary the pasta used. I often use macaroni or elbows as the kiddies love those shapes. You can of course use lasagne sheets too and layer like a traditional lasagne. [...]
