Cheese and Broccoli Filled Duets

Who loves the chicken "Duets" you can buy in the freezer section of the supermarket? My best friend loves them and challenged me to see if I can create them. Challenge accepted. My biggest concern was the sauce for the filling and how would I shape the chicken around it. Turned out it was so easy and tastes amazing. The sauce is so full of flavour. Chicken Pizziola

This is delicious and can suit lots of different tastes. Use any topping you like! My partner had ham, capsicum, onion and garlic. I had capsicum, onion, garlic, mushrooms and pineapple. Baby spinach, deseeded diced tomato, olives, sun dried tomato, roasted capsicum etc are all yummy toppings. I use my Tomato and Bacon Sauce for this recipe for an extra flavour kick. It's not a complete tmx made meal but the tmx helped.

Garlic Beef Stirfry

This was delicious and I don't like red meat generally. The meat was surprisingly tender. Swap beef for lamb or chicken if desired. Use any vegetables you like. Bok choy, broccoli, sugar snap peas, baby corn and bean sprouts would be scrumptious. This would be just as yummy with no meat. It doesn't get much easier than this! I have used my own garlic seasoning mix which can be found here.

Chicken Parmigiana with Tomato Bacon Sauce

Originally posted on our Facebook page 16th December 2013. Yum! My partner is in charge of cooking these. This is his meal. They aren't a full thermo mixer meal but different components are made in it very easily. Store bought is fine too though if you have it in the pantry. We use my Tomato Bacon Sauce so we only occasionally add a slice of bacon or ham on top.

Chicken Cordon Bleu

Normally when I make things like this I use a whole chicken breast however people mentioned making chicken mince and using that instead so I gave that whirl tonight. I think I'll stick to chicken breasts though when making this in the future as I prefer them. Mincing is a good option though as you can make more and extend the mixture. Chicken and Vegetable Fettuccine

Vera’s Meatloaf with BBQ Sauce

Well I tried but I wasn't successful in cooking the whole thing in the tmx. I should add, you could cook this in the tmx but you wont have the nice BBQ sauce absorbing into the meat or a nice thick sauce happening on top of the meatloaf. Asparagus Chicken

This recipe belongs to my beautiful best friend and has been a favourite of mine for many years. It's normally a stove top dish but she recently tried it in her Bellini and tonight I tried it in the tmx. I do prefer it done on the stovetop but the tmx version is very nice as well. This can be served on rice instead of pasta if you prefer.

Thai Chicken “Fried Rice”

We are loving tmx "fried rices" at the moment. Its so easy and makes a lot. I thought I would experiment last night. I'm not sure why I do as it often ends in disaster but this was surprisingly a success! The flavours were quite subtle. I was worried it would be too powerful or hot but it wasn't. The lime made it very refreshing.

Chicken, Bacon and Leek Risotto

Originally posted to our Facebook page 1st November, 2013. After a lot of trialling I have found a risotto recipe that everyone likes. My partner in particular likes this one and it is full of flavour. I always use store bought chicken stock and I find that it gives it a real flavour kick. You can vary what you use of course. People rave about thermomade chicken stocks and pastes. I'm yet to try making these myself. I add asparagus and spinach to this also if I have some in the house for extra veggies. Peas would work well too.

Garlic and Soy Chicken “Fried Rice”

Originally posted on our Facebook page 30th October 2013.   Everyone kept talking about "fried rice" in the Thermomix so I thought I better see what I was missing out on. I searched a few different recipes but was worried there wouldn't be enough flavour so I experimented. So glad I did because I found a new favourite. Everyone had two bowls full and my partner had three! There is plenty left for lunch today for two people too. The flavours in this recipe are a hit in this house and inspired this creation.

Capsicum and Bacon Spaghetti

This was extremely flavoursome given how few ingredients are actually in the dish. This tasted delicious cold the next day and would make a great pasta salad.

Chicken Kiev

I've seen this popping up all over Facebook in the last week and thought I would try making them with the help of my tmx. I just used bought butter to make the herb and garlic filling but next time I'll make the butter from scratch from the EDC and then add my garlic and herbs. I made my own breadcrumbs and baked this in the oven. It was extremely delicious.

Roasted Capsicum and Spinach Wonton Quiches

These were our Good Friday meatless lunch yesterday. They were so easy I've whipped up another batch for my best friend.    These are so quick to make as they use wonton wrappers instead of pastry. I used to be a Tupperware manager for years and Tupperware consultants have some of the best recipes and ideas! They here, see and taste everything. Spinach and Cheese Wreath

 Thank you internet for this idea! I had seen a photo of a pesto version and thought Id try my own version. This was yesterdays experiment and it was deeeeelicious! My 4 year old couldn't get enough whilst my 5 year old insisted it tasted like "one hundred flies" but gobbled it up regardless! Kids hey.    I kept this very basic as the kiddies were eating it so the filling could be experimented with further. Potato Topped Meatloaf and Veggies

If you are looking for a dish that feeds a huge family, this is it! The meatloaf is large and filling and served with a steamer tray full of veggies really makes the meal go further.  Meatloaf is always a hit in our house! I thought I would try a potato topped one instead of having mash on the side. It was delicious. I have cooked this meatloaf in the oven for ease. You can cook it in your steaming attachment if desired however you will need to transfer it to the oven once topped with potato.

Chicken Meatball Bake

This was an experiment of mine that actually turned out well. I cooked everything in the tmx and steaming attachment. I was able to cook the angel hair pasta in the basket whilst cooking the sauce below in the bowl. It worked but I'm not sure if it was a fluke. For this recipe I'm going to advise you to cook it on the stove whilst everything else is bubbling away. If you are feeling adventurous give it a whirl in the basket.
