I’m not sure how we came up with this name but let’s roll with it! This meal is delicious, budget friendly, great the next day or reheated, feeds A LOT or plenty as leftovers, freezes well and you can add lots of vegetables too if desired. Winner in my books!

Quick Stick Macaroni Beef

Ingredients
  1. 500g elbow or macaroni pasta
Mince mixture
  1. 500g good quality mince
  2. 1 tablespoon dried onion
  3. 2 teaspoons dried garlic powder
  4. 1.5 tablespoon of Tuscan seasoning, see blog for my homemade recipe
  5. 1 teaspoon dried oregano
  6. 1 teaspoon smoked paprika
  7. 1 carrot, grated
  8. 1 zucchini, grated
  9. 1 red capsicum, seeded and diced finely
  10. 100mls water
  11. 400g tin of diced tomatoes
Instructions
  1. Cook pasta according to packet instructions. Drain and set aside.
  2. Add mince, carrot, zucchini and capsicum to a large frying pan and cook over medium heat. Add a little oil if needed.
  3. Once mince has browned, add tomatoes, water, dried herbs and spices.
  4. Break up mince and tomatoes with a spoon.
  5. Simmer on low heat for 20 minutes, stirring often.
  6. Stir through cooked pasta.
  7. Serve.

Ingredients
  1. 500g elbow or macaroni pasta
Mince mixture
  1. 500g good quality mince

  5. 1 teaspoon dried oregano

  7. 1 carrot, roughly chopped
  8. 1 zucchini, roughly chopped
  9. 1 red capsicum, seeded and roughly chopped
  10. 400g tin of tomatoes
Instructions
  1. Cook pasta according to packet instructions. Drain and set aside.
  2. Add vegetables to bowl except tomatoes.
  3. Blitz on speed 7 for 5 seconds.
  4. Scrape down.
  5. Add tomatoes, dried herbs and spices.
  6. Insert steaming basket into bowl.
  7. Break up mince into large chunks and place in basket.
  8. Cook at 100 degrees, speed 2 for 22 minutes.
  9. Serve as is or break up mince slightly by blitzing on reverse, speed 3 for a few seconds.
  10. Stir through cooked pasta.
  11. Serve.
